How to prepare Stir-fried White Eggplant

Prepare the ingredients
After buying the white eggplant, wash it thoroughly, then use a knife to cut it into wedges. Then soak the eggplant in water mixed with lemon juice for about 15 minutes.
Next, boil a pot of water. Once the water boils, add the white eggplant and boil for about 5 – 10 minutes until it’s cooked, then remove it and place it in a bowl of cold water.
Peel the shallots and slice them thinly. After washing the green onions, chop them finely.

Stir-fried Eggplant
First, you place a non-stick pan on the stove, then add 1 spoon of cooking oil. When the oil is hot, add sliced shallots and sauté until fragrant.
After the shallots turn golden, add all the prepared eggplant to stir-fry. Then, season the pan with 1 tablespoon of fish sauce, 1 teaspoon of sugar, 1 teaspoon of MSG, 1/2 teaspoon of seasoning powder, 3 tablespoons of water, and continue to stir-fry for about 5 minutes for the eggplant to absorb the seasoning.
Finally, you can adjust the seasoning to your taste and turn off the stove. Serve the stir-fried eggplant on a plate, then sprinkle with chopped green onions and a little ground pepper to finish.
Tip: To avoid breaking the eggplant, do not stir too much while frying. -
