Ingredients for Grapefruit Mousse For 6 pieces

Tips for choosing good grapefruit:
- The skin is taut, shiny, with evenly distributed thorns and large thorn spots.
- The fruit should be round and not misshapen.
- It’s best to choose fruits with thin skin (by lightly tapping the skin to hear a “thud”), as these are usually ripe and delicious grapefruits.
- A heavy fruit, weighing about 1kg or more, is typically ripe.
- The grapefruit stem should be fresh and firmly attached to the fruit for the best quality.
How to make Grapefruit Mousse

Blend the grapefruit
After separating the segments and removing the seeds, put 200g of grapefruit flesh into the blender, press the button, and blend until the grapefruit is smooth.

Cook the grapefruit juice mixture
Pour the blended grapefruit juice into a small pot, place it on the stove over medium heat, then add 70g of sugar, stir well, and cook until the mixture turns an attractive color and thickens slightly. At this point, add 5ml of lemon juice, stir again before turning off the heat.

Mix the cream cheese mixture
Take a large bowl, sequentially add 35ml of cream cheese, 30g of sugar, 50ml of yogurt, and 1 teaspoon of vanilla, and mix well.
Next, add 100ml of blended grapefruit juice and mix well with 5g of gelatin (dissolved in a double boiler), then add 50ml of fresh cream, and mix well again.

Pouring the cake mold
You pour the cream cheese mixture (just made) into the cake mold. Then, place it in the refrigerator refrigerator for about 2 – 3 hours without covering or wrapping tightly.

Making grapefruit syrup
Add 50ml of blended grapefruit juice, 25g of sugar, and 50ml of corn syrup into a small pot, place it on low heat, and stir until the sugar dissolves and turns a beautiful color. Turn off the heat and strain through a sieve to obtain the juice.

Making grapefruit jelly
You add a piece of 4g gelatin (soaked soft in water), squeeze out excess water, and then add it to the filtered grapefruit syrup, using a spoon to stir until the gelatin completely dissolves.
Next, add 35ml of fresh cream, stir well, and dip a skewer into red food coloring.
Then, add 50g of melted white chocolate into the mixture, stirring well.

Completing the cake
Take the cake mold out of the refrigerator, then carefully remove each piece from the mold to avoid breaking, and place it on a clean rack. Pour the grapefruit jelly over the surface of the cake, and the remaining jelly will drip down onto the rack.
Finally, take a round piece of sponge cake that matches the size of the mousse piece, place it on a plate, and then add the mousse (that has been poured with grapefruit jelly) on top. Next, pour a little grapefruit syrup into the center of the cake and sprinkle some grapefruit flesh on top for decoration. And it’s done!
