How to choose good green papaya:
- You should choose duck-billed papaya for salad (those that are elongated in shape). The best papaya is usually the two-skin type, with an outer skin that is yellow with small green specks. Because those fruits are very dense inside.
- For a crispy, sweet, and fragrant salad, choose fruits that are still fresh, feel heavy in hand, with sap still sticking to the stem, and the flesh is still firm. If the fruit has been picked for a long time, the flesh will be soft, and these fruits will not be crispy or fragrant when shredded.
- You should also avoid buying papaya on rainy days or a few days after rain because papaya during that time will taste very bland.
How to choose good pig skin:
- Good pig skin should be selected from the skin under the tenderloin, the lean shoulder meat, with thick, flat skin, and large size will be easier to process. Avoid choosing the belly skin because this part lacks tension, is thin, and can easily be torn and not crispy.
- Pink skin, with elasticity, and without a foul smell is good pig skin.
How to prepare Pork Skin Papaya Salad

Prepare the ingredients
Papaya, cut in half or quarters, soak in a basin of water for about 5 – 10 minutes to release the sap. Then wash it thoroughly, peel it, cut it in half and remove the seeds, cut off the bitter flesh at the stem, then shred it into long strips.
As you shred, soak the papaya in diluted saltwater, adding a few ice cubes to keep the papaya white and crisp.
Clean and chop various herbs.
Clean garlic and chili, then mince.
Small tip: You can soak the papaya in a basin of diluted saltwater and add 1/2 a lemon for about 5 minutes to help the papaya stay white and tasty.
Clean the pork skin, rub it with salt and lime or vinegar while washing to reduce the odor, then rinse it again with water.
Put the pork skin in a pot, add enough water to cover the skin, add 1 tablespoon of seasoning powder, 50g of onion, and 40g of lemongrass, boil for about 15 – 20 minutes over high heat until cooked. Remove the skin and place it in a bowl of cold water with a bit of lime for about 5 minutes to make it crunchy and prevent browning. Then, take it out and let it drain.
Small tip for preparing pork skin
- You can clean the hairs by dipping the pork skin in boiling water for about 3 minutes to tighten the skin, then use tweezers to remove any remaining hairs. Use a knife to remove all excess fat under the skin for a crispier result.
- Washing with lime and salt helps keep the pork skin white and clean.
- You should not boil it for too long as it will make the pork skin soft and unappetizing.
Let the pork skin drain and slice it thinly.

Mixing the salad
Add pig skin and shredded papaya to a large bowl, then add 40ml of fish sauce. Gently mix until the ingredients are evenly coated.
Add 55g of sugar, 35ml of lime juice, minced garlic, and chili, then mix well to let the salad absorb the flavors.
Finally, add coriander, basil, mint, and Vietnamese balm to the bowl and mix once more.
Tip: If you are not used to mixing salads, you can prepare a separate fish sauce dressing, season it to taste, and then add it to the papaya bowl.
You can sprinkle some dried beef on top of the pig skin salad for an extra spicy kick. Don’t forget to add some roasted peanuts for a nutty and rich flavor!
