How to choose fresh duck meat
For live ducks
- You should buy live ducks with shiny white feathers, and the inside should have no down feathers, with the outer feathers long and fully grown.
- Additionally, a good duck will have a plump breast, thick neck and belly skin. When you take the two wings and cross them, if they can cross each other, the duck is mature, easy to pluck, and has plenty of meat.
- Avoid choosing ducks with fluffy feathers, an unpleasant odor, or looking listless, as this may indicate a sick duck.
For processed ducks
- You should choose ducks with a uniform light yellow color, and when you touch them, they should feel firm and elastic.
- Moreover, to ensure safety, you should buy pre-processed ducks from supermarkets or reputable local butcher shops that are trusted by many people.
- Avoid buying ducks with bruises, that feel soft when pressed, or emit a foul smell. This could indicate that the duck has been stored for too long and is no longer fresh or of good quality.
How to choose fresh mangoes
- When buying mangoes, you should choose ripe ones with smooth, shiny green skin and a natural, subtle fragrance.
- Additionally, to select the freshest ripe mangoes, you can gently press the mango. If it feels firm when pressed and is not overly soft or bruised, then it is a good quality mango worth buying.
- Avoid buying bruised mangoes, those with dark blemishes, or those that look appealing but may have been treated with chemicals or artificially ripened.
How to prepare Duck Mango Salad

Prepare and boil the duck
To save time and make it convenient, you can ask the seller to clean the duck for you. When you get home, you just need to remove the duck’s odor by rubbing it with salt and crushed ginger for about 5 – 7 minutes, then rinse with clean water.
Next, place a pot on the stove, add 800ml of water, and bring it to a boil. When the water starts boiling, add 4 stalks of lemongrass, 4 kaffir lime leaves, 2 crushed ginger pieces, and 2 crushed shallots, then continue to boil on medium heat for another 3 minutes before adding the cleaned duck.
Boil for about 5 minutes on medium heat until the duck is firm, then add 2 tablespoons of seasoning, 1 tablespoon of monosodium glutamate, 1 tablespoon of sugar, and 2 tablespoons of fish sauce.
Stir well, reduce the heat, and boil for 25 minutes until the duck meat is tender, then turn off the stove.
How to prepare duck without odor:
- Method 1: Use salt, white wine, and a little crushed ginger to rub all over the duck’s exterior for a few minutes, then rinse thoroughly with water and let it drain.
- Method 2: Alternatively, you can also use salt to rub evenly over the duck, then use a halved lemon to rub evenly over the duck meat again and rinse with water.

Prepare other ingredients
After cleaning the leaves, wash the cilantro, coriander, and rice paddy herb with water, drain, and cut into pieces. Wash the remaining 4 lime leaves and then cut them into thin strips like thread.
Wash the chili, remove the stem, and slice it. The remaining lemongrass, after washing with water and draining, is sliced into thin round pieces.
Use a spoon to scrape off the outer skin of the galangal, then slice it thinly and cut into small strips. Peel the onion, cut it in half, then slice it thinly, put it in a bowl of ice water, soak for about 5 minutes and then remove it to drain.
Use a peeler to remove the skin of the mango, cut the flesh of the mango and then cut it into strips. Pick the basil leaves, wash clean, and drain. Cut the lime into equal pieces.
Tip: To reduce the pungency and make the onion crispier, you should soak the onion in ice water and then remove it to drain. -
Shred the duck meat
After boiling the duck, take it out and rinse it once with water to cool it down, then begin to remove the duck bones and cut the duck meat into small bite-sized pieces.

Mixing Duck Salad
Put the chopped duck meat into a bowl along with 1 teaspoon of MSG, 2 teaspoons of sugar, 1 teaspoon of good seasoning powder, and the juice of 3 filtered limes, then stir well for the spices to penetrate the duck meat.
Next, add sliced lemongrass, sliced chili, sliced galangal, and shredded lime leaves, mixing well for about 1 minute to combine the ingredients with the duck meat.
Then add shredded mango and thinly sliced onion, stirring well, then add chopped coriander, chopped mint, and basil.
Continue mixing evenly, then add 1 tablespoon of toasted sesame and 1 tablespoon of roasted peanuts that have been shelled. Stir well and drizzle in another tablespoon of fish sauce.
Mix once more to combine all the mixtures, then serve the duck salad on a plate, decorate with a few sprigs of basil, and enjoy!
