How to Choose Fresh and Delicious Goat Meat
- Good goat meat is fresh goat meat, soft young goat, with a slaughter to cooking time of about 12 hours.
- Fresh goat meat has a pinkish-red color, firm texture, and does not leak water. Frozen goat meat is pale, often leaks water and has a fishy smell.
- Young goats usually have less strong goat smell, while older goats have a stronger odor. Young goats have pinkish-red meat, with fine and small fibers. Older goats have darker meat and larger fibers.

How to prepare Lemongrass Steamed Goat

Prepare the goat meat
Buy goat meat, wash it thoroughly, then leave it whole to drain. Use white wine (or vinegar) for preliminary processing to prevent the goat from having a fishy smell. Continue to cut a few slits in the goat meat with a knife.
How to prepare goat meat without fishy smell:
- Using white wine: Wash the goat meat thoroughly. Peel the ginger, wash it, then mince it finely, mix it with white wine. Soak the goat meat in the white wine mixture for about 5 minutes, then rinse with cold water.
- Using vinegar: Mix 15 ml of rice vinegar with 1 liter of clean water, boil on the stove. Boil the goat meat in this mixture until the water boils again, then take it out. At this point, the goat meat will have significantly reduced the fishy smell.

Minced garlic. Crush the lemongrass and cut it into pieces about 1 – 2 finger joints long.
