How to make Watermelon Candy

Prepare watermelon rind
First, dissolve 4 grams of lime in cold water and let it sit for a few hours until the lime settles at the bottom. Use the clear lime water on top to soak the watermelon rind.
Peel off the green part and red flesh of the watermelon, keeping the white flesh, then soak it in the clear lime water for 3 – 4 hours.
Next, wash the watermelon rind thoroughly under cold water and let it drain.
Note: Soaking in lime is not harmful to health; this method will help the candy maintain its firmness and not become soft when cooked

Blanch the watermelon rind in diluted vinegar
Dissolve 1 tablespoon of vinegar in 1 liter of hot water, then soak the watermelon rind in it for 2 minutes.
After 2 minutes, rinse the watermelon rind with clean water and let it drain.

Soak in sugar
Add the watermelon rind to a bowl, add 120g of sugar, and mix well to allow the rind to absorb the sugar.

Cooking watermelon jam
Place a frying pan on the stove, add the watermelon rind that has been soaked in sugar, 2 drops of pandan leaf essential oil, and stir continuously over low heat until the sugar crystallizes into the jam, and the pan is dry, which indicates it’s done.

Final product
Watermelon rind jam has an attractive green color and has a taste quite similar to winter melon jam, chewy and lightly sweet. Although this jam is quite new, it promises to be loved and embraced by many families!
Successful implementation tips:
- You should pay attention to the amount of sugar when cooking, because if there is too little sugar, the jam will not be successful.
- When cooking, first set the heat to medium; when the mixture of melon rind and sugar boils, reduce it to low heat and stir continuously.
- Do not keep the heat too high as it will cause the sugar to dry out quickly before the moisture evaporates, resulting in the jam being both burnt and soggy.
- You should use a pan with a thick bottom. If the pan is too thin, the jam will burn before the water evaporates and the sugar crystallizes.
How to store jam to prevent ants and moisture:
- When the jam has completely cooled, store it in jars, glass containers, or tightly sealed plastic bags.
- Keep the jars of jam in a closed cupboard, in a dry environment, avoiding high-temperature areas like the kitchen.
- Do not store the jam in the refrigerator’s cool compartment. This will spoil the jam and cause it to leak if taken out to room temperature.
- To avoid ant problems, simply add a few bay leaves or cloves into the jar or container of jam.
- Additionally, you can also use citrus peels like lemon or grapefruit placed in the cupboard to effectively repel ants.
