How to make Milo bread

  • Mix the egg and milk mixture

    Add 1 chicken egg, 250ml of warm fresh milk (about 35 – 38 degrees Celsius), and 56gr of butter into a bowl, then use a whisk to mix well until the ingredients are combined.

  • Mix the dough

    Add 360g of flour, 50g of sugar, 2 teaspoons of yeast, 1/2 teaspoon of salt, 100g of Milo powder.

    Use a whisk to mix the ingredients thoroughly until they are well combined and the dough forms a cohesive mass.

    Note: Do not add salt directly to the yeast as it will kill the yeast or weaken its activity. You can separate the salt and yeast into two different corners.

  • Knead the dough

    Use your hands to knead the dough using the Folding and Stretching technique.

    First, fold the dough over itself, then use the palm of your hand to press and stretch the dough away. Note to press and stretch the dough away rather than pressing down. Next, rotate the dough 90 degrees and repeat the two steps above for 10 minutes.

    How to recognize if the dough meets the requirements:

    • The dough is smooth and elastic.
    • The dough does not stick to your hands: When you press it, it feels slightly sticky, but when you lift your finger, the dough does not stick.
    • The dough can be stretched into a thin film without tearing.
    • Check the dough using the Windowpane test. Tear a piece of dough, stretch it out. If the dough forms a thin film that does not easily tear and light can pass through, it is ready.

  • Proofing the dough

    Grease the bowl and the surface of the dough, cover it with a cloth, and let it rise for 1 hour until the dough doubles in size.

    Tip: To check if the dough has risen properly, press your finger into the dough; if the indentation remains, it is proofed correctly.

  • Shaping the dough

    Spread the dough evenly on the table, then divide it into 22 pieces and roll them into balls.

    Coat each dough ball with breadcrumbs, then cover with a cloth and proof for the second time for 30 minutes.

  • Baking the bread

    Preheat the oven to 165 degrees Celsius for 10 minutes, then bake the bread for 20 minutes.

    You prepare a bowl for 100gr of unsalted butter and 5 packets of milo powder, then use a whisk to mix them together until the butter and milo are well combined.

  • Making the bread

    You take the available slices of bread, use a brush to evenly spread the milo sauce on the surface of the bread. On the second slice of bread, you add string cheese on top and then place 2 slices of bread on top of each other. You do the same with the other slices of bread.

  • Baking the Bread

    Once you are done, place it in the air fryer and bake at 200 degrees for 15 minutes. While baking, you should check to ensure the bread doesn’t burn; it’s best to bake only 1-2 pieces at a time to control the baking process.

Tips for Successful Execution

  • If using instant yeast, it is advisable to use golden instant yeast for rich and sweet breads.
  • Dough not rising after proofing: Check the expiration date of the yeast; if it is close to the expiration date, the yeast’s activity may be weak or it may be dead. To check, mix a little warm water at about 30 degrees (not exceeding 38 degrees). Add the yeast and wait for about 15 minutes; if the yeast bubbles like crab bricks, it is still good, and you can use it confidently.
  • It is essential to knead properly to form gluten connections; this will make the bread chewy and soft after baking.

Tips for Storing the Bread

Store the bread in a sealed box/bag in a cool, dry place. It can be used for about 2-3 days.
