How to make Wonton Soup

Prepare the ingredients
Put 2 bay leaves, 2 star anise, 2 dried chilies, and 1 cinnamon stick into a bowl. Pour hot water into the bowl and soak for 20 minutes.
Peel and finely chop the shallots. Crush the garlic, peel it, finely chop the garlic, then put it into a sieve, rinse the chopped garlic with water, and dry it with a towel.
Tip: Rinsing the garlic after chopping helps to reduce its pungency and gives a slight bitterness to the dish.
Wash the green onions, cut them into pieces of about 2 stalks each, then continue to use the tip of a knife to split the ends of the cut green onions. For the remaining 6 stalks of green onions, chop them finely.
Wash the ginger and cut it into thin slices.

Cooking the broth
Place a pan on the stove, you should use a deep pan. Pour oil to cover half of the pan and turn on the stove to low heat.
Next, add minced shallots, and stir for about 5 minutes on low heat. When you see the oil in the pan starting to boil, gradually add garlic, ginger, chopped green onions, bay leaves, star anise, and cinnamon into the pan.
Mix the ingredients well and stir continuously over medium heat for 20 – 30 minutes. At this point, the oil in the pot is boiling, producing tiny bubbles like soap. Check to see if the shallots have turned golden brown, then turn off the stove.
Finally, pour the mixture into a bowl through a strainer to separate the cooking oil and the ingredients. Remove ingredients like bay leaves and star anise, leaving only the garlic and minced shallots in the strainer for further use.
Tip: With the leftover cooking oil, let it cool and store it in a jar with a lid, keeping it in a cool place to use for frying other dishes, helping the food to be fragrant and slightly rich.

Mixing and marinating shrimp and meat
You can choose to buy pre-ground pork or buy whole pork to chop or grind yourself using a meat grinder at home to ensure hygiene.
Wash the shrimp, cut off the heads and tails, peel the shells, remove the back vein, and cut into small dice or chop finely.
Put all the shrimp and minced meat into a bowl. Marinate the mixture with 1.5 tablespoons of soy sauce, 1.5 tablespoons of fish sauce, 1 tablespoon of oyster sauce, 1 tablespoon of white wine, and 1/2 teaspoon of white pepper. Use your hands to mix and knead the mixture for 5 minutes.
Next, add the chopped green onions and the fried garlic and shallots to the shrimp and meat mixture. Mix the mixture again and marinate for 15 minutes to absorb the spices.

Wrapping the filling for wontons
First, place a small amount of filling in the center of the wonton wrapper. Brush a thin layer of oil along the edge of the wrapper.
Fold the wonton wrapper in half to form a triangle, gently pressing the edges to secure the filling. Then carefully wrap the wonton securely to ensure the filling does not fall out.
Continue this process until all ingredients are used up.
For any leftover wontons, place them in a container, using plastic wrap between each layer to prevent them from sticking together. Then put them in the freezer refrigerator for storage.

Make wonton soup
