How to choose fresh frog meat
- You should choose live frogs as they will have sweeter and firmer meat, and contain more nutrients.
- Choose frogs that are uniformly large, with brownish-yellow skin.
- Opt for field frogs, which are larger and have brownish-yellow skin. Press on the frog’s thigh to feel the firmness.
How to choose green bananas for hot pot
- To make the dish more delicious, you should not choose ripe bananas or very unripe bananas, but rather choose mature green bananas.
- Choose bunches of bananas that are dark green, with plump, evenly curved fruits. If there are spots starting to turn light yellow, that’s even better, as these are naturally ripened bananas that won’t be too bitter when eaten.

Prepare and marinate frog meat
You can buy cleaned frog meat at markets or supermarkets for more convenience.
To eliminate the fishy smell and clean it, wash the frogs with water mixed with salt and vinegar. Then rinse and let the frogs drain.
Next, use a knife to chop off the frog’s toes, then cut them into bite-sized pieces and place them in a bowl.
Add to the bowl 1 tablespoon of ground turmeric, 2 tablespoons of fish sauce, 1 tablespoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of cooking oil, and a little ground pepper. Then mix well and marinate the frogs for 20 minutes for the spices to soak in.

Prepare other ingredients
Peel the green bananas and then soak them in a basin of water mixed with the juice of 2 lemons and a little salt; this way, the bananas won’t turn dark and will be free of sap.
Wash the wild betel leaves and perilla leaves with water, then drain and chop them finely. Peel and mince the garlic, then set it aside on a plate.
Cut the tofu into small square pieces suitable for eating. Then place a pan on the stove, add about 3 tablespoons of cooking oil. When the oil is hot, gently add the tofu to fry until golden and crispy on both sides. After that, remove it and let it drain.
After frying the tofu, add a little more cooking oil. When the oil is hot, add the frog skin and fry over medium heat until crispy. When the frog skin turns slightly golden and crispy, remove it and let it drain.

Stir-fry frog meat with green bananas
Place a deep pan or pot on the stove, add a little cooking oil to the pan. When the oil is hot, add minced garlic and sauté until fragrant and golden. Then add the marinated frog into the pan and stir-fry over medium heat.
Add 1 teaspoon of salt to the pan and continue to stir until the frog meat is slightly firm. Then add the green bananas and stir well. Add 1/2 tablespoon of shrimp paste for aroma and stir-fry the frog until the meat is firm.

Add fermented rice and complete
When the frog meat is firm, add 1 cup of water to 1/2 cup of fermented rice, stir well, then strain the fermented rice through a sieve into the frog pan and stir well.
Next, pour enough water to cover the frog meat, add the fried tofu and fried frog skin, then cook over medium heat for about 15 minutes until the frog meat is tender and cooked evenly.
After about 15 minutes, the hot pot will be well cooked. Add the chopped wild betel leaves and perilla leaves to the pan. Mix well and taste to adjust the seasoning.
Once finished cooking, scoop the frog hot pot into an inox hot pot and heat it on a mini gas stove or place it in an electric hot pot to keep it hot and bubbling while eating!
