How to choose fresh beef
- To choose good beef, you should observe the color of the meat piece. Fresh and good meat usually has a bright red color, not dark red, and the fat should be light yellow.
- You should choose small and tender pieces of meat, with fine fibers, and when pressed, they should have good elasticity.
- If you see the meat has small white nodules that are easy to detach, it could very likely be tapeworm. You should also avoid small pieces of meat that have been pre-cut, as they often contain tapeworm.
How to choose good bell peppers
- You should choose bell peppers with a base divided into 3 parts; these bell peppers will be tastier, crunchier, and have a richer flavor when stir-fried.
- Choose fruits with a smooth, shiny, and firm surface and still have their stems.
- Choose bright-colored fruits that are not too light because these will be fresher and richer in nutrients.
- Avoid fruits that are bruised, waterlogged, wrinkled, or have wilted stems.
How to prepare Spicy Stir-Fried Beef

Prepare the ingredients
Garlic, ginger, and shallots should be peeled and minced.
Green onions should have their roots trimmed, washed under running water, and then chopped.
Horn chilies and bell peppers should be washed, seeds and insides removed, then cut into small square pieces. Red chilies should be washed and cut into small pieces.
Celery should be washed and then chopped.

Prepare and marinate the beef
Wash the beef with salted water, using your hands to scrub thoroughly to remove all dirt on the meat. Use a paper towel to dry and then cut into thin slices against the grain.
Put the beef in a bowl and marinate with 1 tablespoon of tapioca starch, 1 tablespoon of cooking oil, and mix well to coat the beef evenly.

Quickly stir-fry the beef
Add 80 ml of cooking oil to the pan and heat it on high. Then slowly add the marinated beef and fry for about 1 to 2 minutes.
Once the beef is seared, remove it to a plate to drain the oil.

Prepare the sauce
To prepare the sauce, add 3 tablespoons of chicken broth (or water) into a bowl, 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of chili powder, 1/3 tablespoon of seasoning powder, 1/4 tablespoon of pepper, 1/2 tablespoon of sugar, and 1 tablespoon of chili sauce.
Use a spoon to mix the ingredients well until they are combined.

Stir-fry the dish
Add 2 tablespoons of cooking oil (about 15ml) into a pan and heat it, then add minced garlic, shallots, and ginger to sauté until fragrant.
Next, add onion, bell pepper, and 1 teaspoon of peppercorns to the pan and stir-fry evenly; when the onion and bell pepper are slightly soft, add the beef and stir well.
After about 1 minute, when the stir-fry has a fragrant beef aroma, pour the prepared sauce into the pan to coat the beef evenly.
Finally, add sliced chili, red pepper, chopped green onion, and chopped celery to the pan, and continue to stir for about 1 – 2 minutes over medium heat.
