- Do not choose snails that are too large or have a strange smell, soft bodies, and scales on the outside. These may be snails that have just died or have been dead for a while.

Preparing the Snails
After buying the snails, soak them in salted water for about 1 – 2 hours, so the snails can expel all the sand and impurities. Then, rinse the snails several times with water and let them drain.
How to Clean the Snails, Removing All Sand- Method 1: Soak the snails in rice washing water for about 1 hour to let the snails expel all the sand. The impurities from the rice will help the snails clean themselves, and you just need to rinse them well afterward.

Preparing Other Ingredients
Wash the chili, remove the stems, chop 1 chili finely, and slice 2 chilies. Peel 4 cloves of garlic and mince them using a knife.
Wash the lemongrass with clean water, then cut it in half, keeping the top part whole and slicing the stem finely.

Boil the snails
Place a pot of water on the stove, turn on high heat to bring the water to a boil quickly.
To make the snails less slimy, fragrant, and cook faster, wait for the water to boil before adding the snails and the whole lemongrass, boil for about 15 minutes, then scoop them out and let them cool.

Steam the snails with pepper
Place a new pot on the stove, add 1 tablespoon of cooking oil, and turn on medium heat to heat the oil. When the oil is hot, add garlic and 1/3 of the minced lemongrass to sauté until fragrant.
Once the garlic and lemongrass are golden, add about 250ml of filtered water. Then, wait for the water to boil and add all the snails that were just scooped out, stir well, allow the snails to absorb the seasoning, then cover the pot and wait for it to boil again.
Next, open the lid and add 1/2 teaspoon of salt, 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning powder, 1.5 tablespoons of ground pepper, stir well, then reduce the heat, cover the pot, and steam for another 5 minutes.
