Ingredients for Spicy Chicken Stir-Fried Noodles Serves 3

How to choose fresh and delicious ingredients
How to choose good chicken thighs:
- Observe the outer chicken skin, it should be thin and bright. The meat inside should not be bruised, dull, or watery.
- Press on the chicken meat; it should feel elastic, firm, and fresh. Do not buy meat that dents when pressed, deforms, or has loose skin.
- Fresh chicken thighs have a characteristic chicken smell, not a foul, rotten, or strange chemical smell.
- If buying frozen chicken, choose chicken with a thin layer of ice on the outside, indicating it is freshly frozen and still good.
How to choose good bell peppers:
- Choose bell peppers that are shiny, thick, smooth, and still have the stem. When holding a pepper, it should feel heavy; bright-colored peppers are fresh, sweet, and more nutritious.
- Do not choose peppers that are soft, feel light, or have blemishes, cracks on the surface, indicating they have been stored for a long time and are not good.
How to make Spicy Sour Chicken Stir-Fried Noodles

Prepare chicken thighs and chicken hearts
Clean the chicken thighs, remove the bones. Cut the meat into long strips about 1cm wide.
If using chicken breast or fillet, also clean, remove bones, then cut the meat into long strips.
Clean the chicken hearts, cut them in half, and remove any clotted blood inside. Rub the chicken hearts with salt and then rinse with clean water.
How to clean chicken meat, no odor
- Pluck the chicken feathers thoroughly, including fine down (fluff); the chicken will be whiter and have less odor.
- Crush 1 piece of ginger, mix it with 50ml of white wine, and rub it all over the chicken; let it sit for 30 minutes. When cooking, rinse the chicken with water until clean.

Prepare the noodles
Prepare the sauce: add 1 teaspoon of seasoning, 1 teaspoon of sugar, 4 tablespoons of tomato ketchup, 1 tablespoon of soy sauce to a bowl, and mix well.
Boil a pot of water until it’s really hot, then add the noodles and blanch for about 4 minutes.
Remove the noodles and place them in the sauce you just made, add 2 tablespoons of cooking oil, and mix well.
Note:- You can buy egg noodles or make them yourself with a fresh noodle maker.
- Make sure to boil the water really hot for blanching the noodles to prevent them from breaking.

Prepare other ingredients
Peel the onions, garlic, and ginger, smash them, and chop finely.
Clean the mushrooms, cut them into bite-sized pieces. Mix the mushrooms with half of the smashed onion, garlic, and ginger, 1 tablespoon of soy sauce, and 1/2 teaspoon of sugar, and marinate the mushrooms for about 10 minutes.
Wash the carrots, cut them into strips about 3mm thick and 5cm long. Cut the bell peppers into strips about 3mm thick.
Wash the celery, cut the stalks diagonally, and chop the leaves finely.

Marinate the chicken and chicken hearts with spices
Put the chicken and chicken hearts into a bowl, mix well with the remaining minced onion, garlic, and ginger, 1 teaspoon of seasoning powder, 1 teaspoon of sugar, 1 tablespoon of soy sauce, and 1 tablespoon of oyster sauce. Marinate the chicken for about 30 minutes to let the meat absorb the spices.

Stir-fry chicken
Place a pan on the stove, heat 1 tablespoon of cooking oil, add a slice of purple onion for aroma, then add the marinated chicken heart and meat, stir-frying vigorously over high heat.
Add 1 sliced purple onion and 5 stalks of green onion, stir-fry for about 5 minutes until the chicken is cooked. Sprinkle in 1/2 teaspoon of pepper, stir well, and transfer the chicken to a bowl.
Note: Stir-fry the chicken over high heat to prevent the meat from releasing water. -
Stir-fry other ingredients
Stir-frying noodles: After mixing the noodles with the sauce, add them to the pan along with 1 minced garlic clove. Stir the noodles for about 1-2 minutes until they are dry and less watery, then transfer them to a bowl.
Stir-frying vegetables:
- Add 1 tablespoon of cooking oil to the pan, heat it, then add vegetables including carrots, bell peppers, and celery stalks, stirring well. Season the vegetables with 1 teaspoon of seasoning powder and 1 teaspoon of sugar.
- Stir-fry over high heat for about 2 minutes, then add mushrooms and stir-fry for another 2 minutes before adding the celery leaves, stirring well, and turning off the heat.
Mix 1/3 of the chicken and chicken heart into the vegetable pan. The remaining part is placed on top of the noodle plate when serving.
Note:- After mixing the noodles with the sauce, stir-fry them immediately because if left too long, the noodles will stick together and be difficult to fry.
- When stir-frying vegetables, cooking over high heat will help keep them crisp and retain their green color. Do not overcook the vegetables as this will make them mushy and release water, which is not tasty.

Final Product
You take the noodles out onto a plate, mix with vegetables, scoop some chicken on top, sprinkle a bit of ground pepper and cilantro, and it’s ready to enjoy.
If the noodles are bland, you can serve them with soy sauce and chili sauce to taste.
