How to choose fresh catfish
- You should choose live catfish, with shiny skin, the body of the fish should not be scratched or show any strange signs, and the eyes should be clear and slightly bulging.
- When buying, be careful to choose catfish with a slightly pointed head to avoid mistakenly buying bullhead catfish which have a large and flat head.
- You should not buy fish that are dead, have cloudy eyes, or a swollen belly because when eaten, the meat is often very mushy and not tasty.
How to choose delicious, quality shiitake mushrooms
- It is advisable to buy those with bright colors, a characteristic aroma, and avoid choosing mushrooms that are bruised or have a rotten smell. If the cut releases a milky white substance, it is a sign of poisonous mushrooms.
- Choose mushrooms with a firm stem, uniform color; if the mushrooms have opened, the gills on the cap should be evenly spaced, nice, and dry.
- When choosing fresh shiitake mushrooms, opt for those with medium-sized caps, tightly closed, and slightly yellow-brown in color. If you see very dark brown mushrooms, it is best not to buy them, as they may be poisonous.
- Avoid mushrooms with bruises or wrinkles on the cap, and do not select slimy mushrooms. Fresh mushrooms will have a thin paper-like film on them.

Prepare the catfish
Remove the intestines and gills from the catfish. Next, pour boiling water all over the fish to remove the slime. After that, rinse it well with water.
Then, cut the fish into even pieces about 2 finger joints long, but do not separate them.

Prepare other ingredients
Peel the ginger, wash it, and chop it finely. Chop the chili, and peel and chop the shallots and garlic, and wash the lemongrass and green onions.
Soak the shiitake mushrooms in water for about 1 – 2 hours, then rinse with clean water and drain.

Marinate the fish
Add the fish to a pot and marinate with a mixture of ingredients including: chopped ginger, chopped chili, 1 spoon of ground pepper, 1 teaspoon of monosodium glutamate, 1 tablespoon of fish sauce, 1 tablespoon of cooking oil.
Then use chopsticks to mix the seasoning evenly. Marinate the fish for about 30 minutes for the fish to absorb the seasoning.
