How to choose fresh and delicious bottle gourd
- Fresh and young bottle gourds have a moderate size, not too big and not too small, with a skin that is more green than white and has a certain softness.
- Additionally, check to see if the stem of the gourd still has sap, and if the outer skin still has a layer of fuzz, as this indicates it is freshly harvested and sweeter.
- Bottle gourds that are mostly white and hard are old, bland, and not tasty. You should also avoid those that are crooked, have bee stings, or show signs of spoilage, being soft or mushy.

How to Make Steamed Stuffed Gourd

Prepare the Ingredients
Peel the gourd, wash it clean, then cut the gourd into pieces about 2 finger lengths long. Use a sharp knife to hollow out each piece of gourd, setting the insides aside.
Trim the roots and wilted leaves from the scallions, wash them clean, chop half finely, and cut the other half into pieces about 2 – 3 finger lengths long.
Peel the shallots, wash them clean, and then mince them.
Finely chop the pork or put it in a meat grinder to grind it smooth.

- Method 2: Rub the meat with white wine or soak the piece of meat in diluted wine for about 5 minutes, then rinse it with clean water.
- Method 3: Additionally, to make the meat cleaner and eliminate any odors, before rinsing with clean water, wash the meat with lemon juice or diluted vinegar.

Mix, marinate the meat and stuff the filling
Add minced meat to a bowl along with finely chopped green onions, minced shallots, 1 teaspoon of seasoning, 1/2 teaspoon of salt, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of ground pepper. Marinate for about 10 minutes for the meat to absorb the spices.
After marinating the meat for the required time, take an adequate amount of meat to stuff into the hollow of the gourd, pressing lightly to compress the meat. Do similarly until all ingredients are used up.

Steam the stuffed gourd
Prepare a steaming pot, add water to the bottom of the pot, and on the top layer, arrange chopped green onions evenly then place the stuffed gourds. Cover the pot and place it on the stove to steam for about 20 minutes from the time the water boils until the gourd is cooked.
Turn off the heat, take the gourd out onto a plate, and enjoy it with a bit of chili fish sauce to enhance the flavor of the dish.
