  • You should avoid buying skin that is broken, crushed, or too fragmented, and if you smell an unusual fishy odor coming from it.

  • Prepare the vegetables

    First, with 100g of vegetables you purchased, place them in a bowl and soak them in 200ml of water for 15 – 20 minutes.

    Once the vegetables are soft, drain the water, then add 2 tablespoons of white wine and 1 small crushed ginger into it, using your hands to gently squeeze for 3 – 5 minutes to remove the unpleasant smell of the vegetables.

    Next, rinse a few times with water until clean, then drain. Finally, use a knife to cut the vegetables into bite-sized pieces.

  • Prepare and marinate the meat

    For the lean pork shoulder, rub a little salt on the surface of the meat for 3 – 5 minutes, then rinse 1 – 2 times with clean water and let it drain. After that, use a knife to cut into thin slices.

    Next, take a plate and proceed to marinate the lean pork shoulder with 1/2 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, and 1/2 tablespoon of fish sauce, using chopsticks to mix well, then let the meat absorb the spices for about 10 minutes.

  • Prepare the other ingredients

    White cauliflower and green cauliflower, when purchased, hold them upright and use a knife to cut them into bite-sized pieces.

    Next, soak the white cauliflower and green cauliflower in diluted salt water for 5 minutes, then rinse a few times with clean water and let them drain.

    For the carrot, use a peeler to peel the skin, then wash it directly under running water until clean, let it drain, and cut it into rounds.

    Finally, trim the ends of the peas and remove the fibers from both sides of the peas. Then, rinse 1-2 times with clean water and let them drain.

  • Blanch the vegetables

    Once the ingredients are prepared, you place a pot on the stove with 700ml of water on high heat. When the water boils, you gradually add all the white and green cauliflower to blanch for about 3 minutes.

    After that, use a sieve to remove the white and green cauliflower, and let them drain. At the same time, continue to add the cut carrots into the pot and blanch for 3 minutes.

    When the carrots turn a light orange color, use the sieve to remove them and let them drain. Finally, add the peas and blanch for another 2 minutes, then remove and let them drain.

    Tip: To avoid the vegetables becoming too soft after blanching, you only need to blanch them briefly, not cook them too much!

  • Stir-fry mushrooms with meat and vegetables

    After blanching the vegetables, you place a pan on the stove with 2 tablespoons of cooking oil over medium heat. When the oil is shimmering, add minced garlic and sauté until fragrant.

    Then, add 100g of marinated pork shoulder, using chopsticks to stir well for about 3 minutes. Once the meat is slightly seared, add all of the white and green cauliflower, and continue to stir-fry for 1 – 2 minutes.

    Next, add the remaining carrots and peas, stir-frying for another 3 minutes before turning off the heat.

    At the same time, place another pan on the stove with 2 tablespoons of cooking oil over medium heat. When the oil is hot, add the sliced mushrooms and 1/2 teaspoon of seasoning, stir-frying for 2 minutes.

    Once the mushrooms have absorbed the seasoning, add the cooked meat and vegetables along with 1/2 tablespoon of fish sauce, and stir well for another 3 minutes.

    Finally, when all the ingredients are evenly cooked, taste and adjust the seasoning to your liking, turn off the heat, plate it up, and sprinkle with a little ground pepper to finish!
