Preparing Sweet Potatoes
Peel the purple sweet potatoes and wash them thoroughly with water.
First, slice the sweet potatoes into pieces about the thickness of a small finger. Then, continue to cut these pieces into thin strands of similar thickness.
Add 2 liters of water and 1 tablespoon of lime powder into a bowl and stir well with your hand to dissolve the lime.
Let the lime water sit for about 15 minutes for the lime to settle at the bottom, then pour off the clear water on top for use.
Next, add the sweet potato strands to the lime water and soak for 2 – 3 hours.
After soaking, rinse thoroughly with water 4 – 5 times and let drain.
