How to choose good purple sweet potatoes, not fibrous

  • Buy sweet potatoes that are intact, not cracked or chipped. When you pick them up, they should feel heavy, firm, and not bruised.
  • Be careful if the sweet potatoes have black spots or are pockmarked, as this indicates they have gone bad.
  • Choose sweet potatoes that are round or elongated, without any waist or dents, and feel not too hard when squeezed lightly; these are usually less fibrous, more starchy, and very sweet.
  • Also, avoid selecting very small, long, waisted, or dented sweet potatoes because they will have more fibers.

How to Make Purple Sweet Potato Jam

  • Preparing Sweet Potatoes

    Peel the purple sweet potatoes and wash them thoroughly with water.

    First, slice the sweet potatoes into pieces about the thickness of a small finger. Then, continue to cut these pieces into thin strands of similar thickness.

    Add 2 liters of water and 1 tablespoon of lime powder into a bowl and stir well with your hand to dissolve the lime.

    Let the lime water sit for about 15 minutes for the lime to settle at the bottom, then pour off the clear water on top for use.

    Next, add the sweet potato strands to the lime water and soak for 2 – 3 hours.

    After soaking, rinse thoroughly with water 4 – 5 times and let drain.

  • Boiling Sweet Potatoes

    Boil 1 pot of water, add a little salt, the sweet potatoes, and blanch them until the water in the pot boils again, then remove.

    Change the water in the pot, add a little salt and continue to blanch the sweet potatoes a second time, then let drain.

  • Marinate the potatoes with sugar

    Next, add 500g of sugar to the sweet potatoes, mix well and let the mixture marinate overnight.

  • Cook the sweet potato jam

    Place a pan on the stove, and add the soaked sweet potatoes (including the sugar water). Cook the jam on high heat until the sugar water reduces to about half the original amount.

    Then, reduce the heat and continue cooking until the sugar crystallizes around the pan and the jam is ready, then turn off the heat. At this point, the jam will still be quite wet, but the heat from the pan will quickly dry it out.

    Finally, add a little vanilla and stir until the jam is completely dry.

    The jam has an eye-catching deep purple color, is chewy and soft when eaten, with a sweet, nutty taste, and a light fatty flavor, extremely delicious.

How to store jam for a long time without leaking water

  • When the jam has completely cooled, store it in jars, glass containers, or tightly sealed plastic bags.
  • Store the jars of jam in a cool, dry place, avoiding high-temperature areas like the kitchen.
  • Do not keep the bean jam in the refrigerator’s cool compartment. This will spoil the jam and cause it to leak if placed outside at room temperature.
  • To prevent ants, just place a few bay leaves or cloves in the jar or container of jam.
  • Additionally, you can also use citrus peels like lemon or grapefruit placed in the cupboard to effectively repel ants.
