How to make Zosui Rice Soup

  • Prepare the ingredients

    First, use a little salt to rub on the chicken meat to help clean and eliminate the odor of the meat. Then wash the chicken meat with water. Cut the chicken into small pieces and place them on a plate.

    Next, peel the carrot, wash it with water, and then cut the carrot into thin small pieces. You can also carve the carrot into flower shapes if you like.

    Wash the green onions, cut off the roots, and then cut the onions into small sections.

    Wash the shiitake mushrooms and soak them in diluted salt water for 5 minutes. Remove the mushrooms, rinse them with water, and then slice the mushrooms thinly. You should use fresh mushrooms for a sweeter broth.

  • Cook the chicken

    Add 800ml of water and the Dashi powder packet into a pot. You can also replace the Dashi powder with Dashi broth if you prefer. Turn on the stove and bring the water to a boil.

    When the water in the pot boils, remove the Dashi powder bag and add the cut chicken. Cook the chicken over medium heat for 5 – 7 minutes.

    After 5 – 7 minutes, add the chopped carrots and cover, continue to simmer over medium heat for about 3 more minutes.

    Place the rice in a strainer, then rinse it with water, gently stirring the rice with your hands to separate the grains. After that, let the rice drain a bit before cooking the soup.

    After about 3 minutes of boiling, open the lid of the pot and add thinly sliced shiitake mushrooms along with 2 teaspoons of soy sauce and 1/2 teaspoon of salt. Stir well to combine the seasonings into the soup. Cover and simmer for another 4 – 6 minutes until the water boils vigorously.

    Crack 1 egg into a bowl and beat the egg. At this point, the water in the pot is already boiling vigorously, open the lid and pour the egg into the pot. Do not stir to avoid curdling the egg.

    Sprinkle chopped green onions, 1/2 spoon of roasted white sesame seeds, and a little ground pepper on top, then turn off the heat. Now you can enjoy it right away.
