How to choose fresh and delicious razor clams
- You should prioritize buying razor clams that have their tongues sticking out; these are live clams, ensuring freshness when cooked.
- Live clams will frequently open and close their shells; when you touch the shell with your hand, the clam will tightly shut its shell to protect itself; these are the clams you should buy.
- Choose razor clams of moderate size; if they are too large, the meat will be tough, and if they are too small, there won’t be much meat.
- Avoid buying clams that are always closed, have a foul smell, these are dead razor clams, which will make the overall dish unappetizing after cooking.

How to prepare steamed razor clams with lemongrass

Prepare the ingredients
With 3 stalks of lemongrass, crush and cut them into pieces about the length of your pinky finger, and slice 2 red chili peppers into small pieces.
For 1kg of razor clams, soak them in rice wash water for about 3 – 4 hours, then rinse the clams under running water to clean off the sand and mud.
How to clean razor clams of dirt:
- Method 1: Soak the clams in diluted saltwater with a few slices of ginger for 2 – 3 hours, then rinse clean with water; the razor clams will be clean and the fishy smell will be eliminated.
- Method 2: Use fermented rice (mẻ) diluted with water to soak the razor clams for about 1 – 2 hours; the clams will expel the dirt and sand.

Steam razor clams with lemongrass
Turn on the stove to high heat, then add the razor clams to the pot, add lemongrass, chili, and 1 liter of water. Cover the lid and steam the clams until they open for about 7 – 10 minutes, then turn off the heat.
Tip: To keep the razor clams sweet and delicious, you can use a steaming pot to steam them. -
