  • Prepare the ingredients

    Cut off the root ends of the spring onions, wash them thoroughly with water, and slice them into small pieces. Wash the ginger, peel it, and slice it into thin strips.

    For the straw mushrooms, cut off the caps, then soak the mushrooms in diluted salt water for 5 – 10 minutes to make them cleaner. Finally, rinse them thoroughly with water.

    To make tamarind juice, you add 50 grams of tamarind to 50 ml of hot water, mash well, then remove the seeds and only take the juice.

    Then, gradually add: 10 ml of vegetarian fish sauce + 60 grams of brown sugar + 1/2 cup of tamarind juice + 1 tablespoon of soy sauce, stir well and cook for about 5 minutes.

    After the mixture boils, add 1 teaspoon of shredded ginger. Next, add 200 grams of prepared straw mushrooms to the pan, stir to coat the mushrooms with the tamarind sauce, and simmer for 10 minutes to let the mushrooms absorb the seasoning.

  • When buying straw mushrooms, you should choose those that are black or gray as they will be tastier than the white ones.
  • Choose mushrooms that are round or cylindrical, still have buds, and are intact without any bruises or leaking water.
