Ingredients for Vegetarian Thai Noodle Soup For 2 servings

Mini chicken thigh mushrooms 150 grams Snow mushrooms 150 grams Fried tofu 250 grams Pineapple 1/4 piece Tomato 1 piece Lemongrass 2 stalks Galangal 1 piece Chopped chili 1 teaspoon Seasoning A little (sugar/vegetarian seasoning/satay/oil of annatto/lime juice)

How to prepare Vegetarian Thai Hu Tieu

  • Prepare the ingredients

    Mini chicken thigh mushrooms and snow white mushrooms, after purchasing, cut off the mushroom stems and soak them in diluted salt water for about 15 minutes, then rinse thoroughly with water. After that, cut the mini chicken thigh mushrooms in half for easy eating.

    Cut fried tofu into bite-sized pieces. Peel ginger, wash it clean, and cut it into thin slices.

    Remove the old and dry outer skin of the lemongrass, then wash it, cut it into sections, and crush it.

    Peel the pineapple, wash it clean, and cut it into wedges. Wash the tomatoes and cut them into wedges.

  • Saute the ingredients

    Place a pot on the stove, heat the pot, then add 2 tablespoons of cooking oil, 2 stalks of lemongrass, 6 slices of ginger, 1 teaspoon of minced chili, and 2 tablespoons of vegetarian satay into the pot and sauté until fragrant.

    Then, add the pineapple that has been cut into wedges and stir-fry.

  • Prepare the broth

    Add 4 tablespoons of sugar, 1 tablespoon of vegetarian seasoning, 2 tablespoons of chili sauce, 3 tablespoons of calamondin juice, 2 tablespoons of annatto oil, and 2 tablespoons of vegetarian satay to a bowl and stir well to dissolve the seasonings.

    After sautéing until fragrant, add 1.5 liters of vegetable broth to the pot. Wait for the pot to boil, then add the calamondin juice mixture prepared earlier to the pot.

    Next, add the mini chicken thigh mushrooms and the snow mushrooms to the pot. When the broth boils again, add the tomatoes and fried tofu.

    Cook until the ingredients are done, then turn off the heat.

    Place the noodles in a bowl, add all the ingredients such as mushrooms, tomatoes, and fried tofu, then pour the hot broth over the top. Add a little chopped green onion, and you’re ready to enjoy.
