Prepare the ingredients
Mini chicken thigh mushrooms and snow white mushrooms, after purchasing, cut off the mushroom stems and soak them in diluted salt water for about 15 minutes, then rinse thoroughly with water. After that, cut the mini chicken thigh mushrooms in half for easy eating.
Cut fried tofu into bite-sized pieces. Peel ginger, wash it clean, and cut it into thin slices.
Remove the old and dry outer skin of the lemongrass, then wash it, cut it into sections, and crush it.
Peel the pineapple, wash it clean, and cut it into wedges. Wash the tomatoes and cut them into wedges.

Saute the ingredients
Place a pot on the stove, heat the pot, then add 2 tablespoons of cooking oil, 2 stalks of lemongrass, 6 slices of ginger, 1 teaspoon of minced chili, and 2 tablespoons of vegetarian satay into the pot and sauté until fragrant.

Next, add the mini chicken thigh mushrooms and the snow mushrooms to the pot. When the broth boils again, add the tomatoes and fried tofu.
