Prepare the Ingredients
Carrots and white radishes should be bought, peeled, and washed clean. Then cut into thick slices about 2cm.
Eggplants should be washed clean, cut into pieces, and halved into bite-sized pieces. Then immediately place them in a bowl of cold water with a bit of lemon juice.
Chicken leg mushrooms should be cut into pieces about 1 cm thick.
20 grams of green onion should be finely chopped. The remaining part should be cut into pieces.
Chinese cabbage and cabbage should be bought, chopped into bite-sized pieces. Rinse with clean water and let drain.
Shiitake mushrooms should be soaked for about 30 minutes to soften them. Then cut off the stems, halve them, and let the mushrooms drain.
Lotus flowers should be washed clean, peeled, then cut into pieces, and finely sliced into a bowl of ice water with a bit of calamondin juice. Soak for 20 minutes, then remove and let drain.
Water spinach should be cleaned and cut into pieces.
Tip:
- After cutting the eggplant, it should be immediately soaked in a bowl of water with lemon juice to reduce bitterness and prevent browning.
- When soaking shiitake mushrooms, gently rub them with your hands to remove all dirt, then rinse with clean water before cooking.

Stewing vegetables for the broth
Place a pot on the stove, add all the chopped napa cabbage, cabbage, carrots, white radish, and green onions. Next, pour in 2 liters of coconut water and 3 liters of filtered water into the pot. Cover and stew the vegetables for about 45 minutes to 1 hour for a flavorful broth.

Making vegetarian fermented sauce
While waiting for the broth to cook, you can prepare the vegetarian fermented sauce. Place 100 grams of soybean paste, 30 grams of white fermented tofu, and half of the chopped lemongrass into a blender and blend until smooth, then transfer to a bowl.
Heat a pan on the stove, add 1 tablespoon of cooking oil. Then add 20 grams of minced green onions and the remaining chopped lemongrass to sauté until fragrant.
Once the onion and lemongrass mixture is golden and aromatic, add the entire vegetarian fermented sauce and stir well for about 1 minute before turning off the heat.
Tip: You should sauté the vegetarian fermented sauce before adding it to the broth, this will enhance the aroma and flavor of the broth.

Cooking the broth for vegetarian noodle soup
After boiling the broth for the required time, you proceed to remove all the ingredients from the pot.
Add all the sautéed vegetarian sauce into the pot. Next, add 1/2 tablespoon of salt, 1/2 tablespoon of vegetarian seasoning, and 1 tablespoon of sugar into the pot. Stir well to combine the vegetarian sauce completely.
Next, add the chicken thigh mushrooms, shiitake mushrooms, and eggplant into the pot. Cook until the broth boils again, then taste and adjust the seasoning to your liking. Let the broth simmer for another 3 minutes before turning off the heat.

Place the noodles in a bowl. Top with vegetarian sausage, add fresh herbs, sprinkle chopped cilantro, and ladle the broth into the bowl to complete.
