How to cook Vegetarian Chả chén

Prepare the mushrooms
Soak the oyster mushrooms in diluted salt water for 20 minutes. After soaking, rinse with clean water, squeeze out the excess water, and tear the mushrooms into small strands.
Wash the enoki mushrooms thoroughly. Cut off the stems.
Note: Be sure to squeeze the oyster mushrooms thoroughly; the drier they are, the firmer the chả will be and it won’t crumble when steamed.

Mixing spices and grinding mushrooms
Put all the mushrooms into a small bowl, then add the tapioca flour and wheat flour. Season the mushrooms with 1 teaspoon of salt, 1 teaspoon of sugar, a little pepper, and two tablespoons of cooking oil.
Mix the mixture well to ensure the flavors are evenly distributed.
Put the mushrooms into a blender to grind the mushrooms. Grind until the mixture is smooth and fine, then transfer it to small bowls and prepare to steam.
Note: Do not add water to the mushrooms when grinding, as the mixture will not retain the delicious flavor of the mushrooms. The finished mushroom cake will spoil quickly.

Steaming the cake
Place the steamer on the stove and bring the water to a boil, then put the mushroom cakes in to steam. Steam the cakes for 40 – 45 minutes until they are cooked.
Take the cakes out and let them cool. Store the cakes in the refrigerator for 1 day to allow them to firm up and become chewy, then frying them will be the tastiest way to enjoy them.

The finished chả chén has an attractive ivory color, is delicious, and can be stored for a long time. This is an appealing dish that should be present in every family’s meal.
Tips for successful execution:
- After steaming the chả, you can fry it and eat it right away once it cools down.
- If stored in the freezer, you can maintain the shelf life of the chả for about 1 month.
