How to choose good ginger

- In addition, the size of the ginger root should not be too large and the offshoots should be minimal.
- When you break off a piece of ginger, good ginger will have a bright yellow color, strong aroma, and a lot of fibers; especially when observed closely, you will see the round veins.

How to make Dried Banana Stir-fried with Ginger
-
Prepare the ingredients
First, peel the ginger, wash it clean with water, then slice it thinly and julienne it.
Next, squeeze the juice of 1 lemon and use a sieve to filter out the seeds.
For the dried bananas, separate each piece, then cut into bite-sized strips.
-
Roasting sesame seeds and peanuts
Place a pan on the stove and heat it. Then, add the sesame seeds and roast them over low heat until they turn golden and fragrant.
Similarly, for the peanuts, roast them for 7-10 minutes until they are cooked and evenly golden. When you check and see that the outer skin easily separates, turn off the heat and let them cool slightly. After that, shell them and place the peanuts on a plate.
Note: During the roasting process, remember to stir continuously to ensure the sesame seeds and peanuts are evenly roasted and avoid burning! -
Cook the syrup
Add 350g of brown sugar along with 250ml of water into the pan and bring to a boil, then add 1/2 teaspoon of salt.
Cook for another 5 minutes until the mixture thickens, then add lime juice and cook for another 3 minutes.
Tip: Adding lime juice will help the dish not to crystallize, making it chewy and tastier. -
Stir-fry bananas and ginger
Add dried bananas and ginger into the pan with the syrup and mix well.
Stir-fry the bananas until there is just a little bit of liquid left, do not let the bananas become too dry.
Tip: Cook over medium heat to allow the bananas to absorb the syrup and ginger better; if you cook on high heat, the bananas may crystallize and lose their flavor.Next, add peanuts and sesame, turn off the heat, and continue to stir well.
Finally, wait for the stir-fried bananas to cool and serve on a plate. And there you have it, the dish is ready!
-
Final Product
The banana jam is just right, not too sweet, fragrant with the smell of ginger, sesame, and peanuts. The banana pieces are chewy, blended with the crunchy peanuts.
This dish is perfect to enjoy with hot tea, which will be wonderful.
How to store stir-fried dried bananas with ginger:
- Put the stir-fried dried bananas in a glass jar, seal tightly, store in a cool, dry place and use gradually.
- Do not put bananas in the refrigerator as it will cause the sugar to crystallize, making the bananas hard and unappetizing.
