- Pay attention to the identifying characteristics of Chinese white radish to avoid buying this type: Smooth, fine, and pure white, quite large, the radish body is thick and long, with no leaf stalks and root hairs.
- It is recommended to buy medium-sized, elongated white radishes towards the tail. Radishes with a thick tail usually have a bland taste.
- Choose white radishes that still have their stalks and roots intact, preferably those with fresh stalks, as these are freshly harvested white radishes.
- Avoid white radishes that have rotten stalks while the skin is still smooth and shiny, as these white radishes have been injected with preservatives.

Preparing the carp
When buying carp, cut off the gills and fins, scrape off the scales, gut the fish, and wash it several times with clean water.
Cut the head and place it in a basin. Cut the body into 3 large pieces and also place them in the basin.
To remove the slime from the fish, add about 1 tablespoon of salt to the basin and rub it evenly on the fish. Then, rinse thoroughly with water several times to remove the slime and blood.

Prepare other ingredients

Wash the chili and cut it into pieces.
Peel the turmeric, pound it finely, then add about 100ml of filtered water to rinse to make turmeric water.
