How to choose fresh and delicious white radish

  • You should pay attention to the identifying characteristics of Chinese white radish to avoid buying this type: Smooth, fine, and pure white, quite large, with a plump and long body, no leaf stalks, and root hairs.
  • You should buy medium to large white radishes, tapered towards the tail. Radishes with a thick tail often have a bland taste.
  • Choose white radishes that still have intact stalks and roots, and opt for those with fresh stalks, as these are the radishes that have just been harvested.
  • Avoid white radishes with rotten stalks while the skin is still smooth and shiny, as these radishes have been injected with preservatives.

How to prepare stewed carp with white radish

  • Prepare the carp

    When buying carp, cut off the gills and fins, scrape off the scales, gut it, and then wash it several times with clean water.

    Cut the head and place it in a basin. Cut the body into 3 large pieces and also put it in the basin.

    To remove the fishy slime, add about 1 tablespoon of salt to the basin and rub it evenly over the fish. After that, rinse it thoroughly with water several times to remove the slime and blood.

    Once prepared, marinate the fish with 1 teaspoon of salt and mix well.

    • Method 1: You can rub the carp with lemon, vinegar, crushed ginger or alcohol, or soak it in water mixed with this solution for about 10 – 15 minutes.
    • Method 2: Soaking the fish in rice water or diluted salt water can also effectively eliminate the fishy smell.
    • Method 3: Using fresh milk to soak the fish is also one of the quick methods to eliminate the fishy smell.

    When you buy white radish, peel it, wash it clean, and cut it into large pieces about 2 finger joints thick.

    Wash the green onions and dill, cut the roots separately, then cut them into pieces about 2 finger joints long.

    Wash the chili pepper and cut it into pieces.

    Peel the turmeric, crush it finely, then add about 100ml of water to rinse to make turmeric water.

  • Fry the fish

    Place a pan on the stove, add about 5 tablespoons of cooking oil, and heat it on high. When the oil is hot, add the fish to fry briefly.

    When one side of the fish is golden brown, flip it over. Fry the fish until both sides are golden brown, then turn off the heat.

    Tip: To keep the fish meat firm and not fall apart, you should fry the fish before braising it.

  • Stewing Fish

    Place a pot on the stove, add 1/2 of the white radish and the dill roots into it. Next, add the lightly fried fish into the pot along with the prepared turmeric water. Then, add the remaining radish along with sliced chili and about 100ml of filtered water.

    Add 1 teaspoon of seasoning powder, 1 tablespoon of fermented soybean paste, 1 tablespoon of soy sauce, and 1 teaspoon of pepper, cover the pot, and stew the fish on low heat to let it absorb the flavors evenly.

    When the fish is tender and the water has reduced, add the chopped green onions and dill on top, then turn off the heat.

    Tip:

    • Depending on your family’s taste, you can adjust the seasonings added.
    • You can stew the fish until the water is completely gone or leave some water to pour over rice.
