Prepare and marinate the fish
After purchasing the fish, wash it clean, remove the gills and fins, then use a knife to gut the fish and discard the intestines. After that, use salt and a little lemon juice to gently rub the surface of the fish to eliminate the fishy smell, then rinse with clean water and cut into bite-sized pieces.
Next, place the fish in a bowl, marinate with 1 teaspoon of sugar, 1 teaspoon of turmeric powder, 1 teaspoon of ground pepper, 2 teaspoons of monosodium glutamate, 2 teaspoons of seasoning powder, 1/2 teaspoon of salt, 1 thinly sliced shallot, and sliced chili, then marinate the fish for 30 minutes to allow the fish to absorb the spices evenly.

First, you place a pan on the stove, add 1 tablespoon of cooking oil to the pan, and heat it over medium heat. When the oil is hot, add the remaining shallots and sauté until golden.
