How to choose fresh beef brisket

  • To buy fresh beef brisket, choose pieces of meat that are bright red, with a layer of opaque white fat on the outside that is still firm and not mushy or torn from the lean part. The marbling inside should be evenly distributed and appear abundantly on the meat. If the fat on the meat is too sparse, it will easily become tough and dry when cooked.
  • Good brisket has good elasticity; when you press on the meat with your hand, it does not leave an indentation. The meat fibers are tender, not too fine, and have the characteristic smell of beef.
  • Avoid selecting brisket pieces that have a pale green, dark red turning black, with dark yellow fat and round white spots on the surface of the meat. Beef that has been stored for too long will have a foul smell, and when touched, the meat feels mushy.

How to choose good fish sauce

  • To choose good cooking fish sauce, you should opt for traditional fish sauce with a protein content of 30 – 40%, which will not be too salty or bland.
  • Traditional fish sauce usually has a strong smell of salted fish rather than the pungent or acrid smell of industrial fish sauce. Traditional fish sauce has a slightly dark brown color and is thicker than industrial fish sauce.
  • To buy traditional fish sauce, you should look for well-known brands that specialize in producing fish sauce in Phan Thiết or Phú Quốc.

  • Molasses is a thick, syrup-like liquid, similar to honey, with a golden color and a sweet taste. It is made from sugarcane that has been pressed for juice and filtered, then cooked over low, stable heat. The process of making molasses is also known as a traditional craft in the midland areas of Northern Vietnam, especially in Nghệ An.
  • Molasses is often used in cooking, for marinating braised meat, grilling, etc. You can also use molasses instead of caramel sauce.

You can buy molasses at large ingredient stores, supermarkets, or purchase it on e-commerce websites.

How to cook Braised Beef Brisket with Molasses

  • Prepare the beef brisket

    Wash the beef brisket thoroughly. Next, put the beef brisket into a bowl, add some shredded ginger and 50 ml of white wine, and massage the beef brisket for about 5 minutes. After that, rinse it again with water. This method will help remove the unpleasant odor from the beef brisket.

  • Marinate the beef brisket

    Peel the onion and garlic, scrape the ginger, and wash everything clean; cut the lemongrass into pieces. Then, put the onion, garlic, ginger, lemongrass, and 2 cinnamon sticks into a mortar and pound evenly.

    Put the beef brisket into the bowl. Add the mixture you just pounded along with 1 tablespoon of chili powder, 1/2 tablespoon of ground pepper, 4 tablespoons of molasses, and 4 tablespoons of fish sauce into the bowl and mix well. Marinate for about 1 to 2 hours for the beef brisket to absorb the spices.

  • Stewed Brisket

    After marinating, place the brisket into a earthen pot. Pour the marinade into the pot as well.

    Next, put the pot on the stove and cook on high heat.

    When the pot starts to boil, reduce the heat and add about 1 small bowl of water.

    Continue to stew the brisket on low heat for about 1 hour until the sauce thickens and the meat is tender.
