  • To make a satisfactory fried spring roll dish, you should choose chicken breast pieces with white skin, as this is from larger chickens whose meat is tastier and more chewy; younger chickens tend to have flabby meat.
  • If you buy skinless chicken breast, observe the layer of fat on the chicken. You should choose the fat that is white for better taste.
  • In addition, you should also choose pieces of breast with fewer stripes in the meat fibers, as these stripes make it harder for the chicken to absorb seasonings and sauces during cooking.

  • For dried black fungus (wood ear mushrooms), prioritize choosing fungal ears that are large, thick, and have few small mushrooms at the base, as this indicates good quality fungus.

  • First, you need to observe the color of the carrots. If you see bright orange carrots that feel heavy and firm, then they are good carrots.
  • Typically, carrots that are less sweet and have reduced nutritional content will have lush leaves growing at the base.
  • In addition, you should buy carrots that are of moderate size, not too large and not too small. Because carrots that are too large tend to be fibrous and are not as sweet as initially.

    For the onion and carrot, clean them, peel them, and then grind them finely. As for the green onions, after washing and draining, chop them finely using a knife.

  • Mix and roll the spring rolls

    To make the filling, put all the ingredients into a large bowl or basin, add 3 – 4 eggs and mashed potatoes along with a little olive oil (you can substitute it with cooking oil), then mix well and let the mixture rest for 5 minutes.

    Next, carefully spoon enough filling into the rice paper, fold the two edges, and roll it up. Do this until all the filling is used. If you are frying in a pan, it’s best to roll and fry at the same time for the tastiest spring rolls.

    • The reason this recipe does not season the filling is that the rice paper already has a salty taste, and when eaten, it will be accompanied by dipping sauce.
    • Additionally, if you are worried that the chicken breast filling will be dry, rest assured because the mashed potatoes will help keep the filling soft and sweet!
    • For the eggs, to create a binding effect for the filling and help the final product be soft and delicious, you should use both the yolk and the white!

  • Fry the spring rolls

    First, heat a pan over medium heat, add enough oil, and wait until it starts to boil before adding the spring rolls to fry immediately, rolling them evenly to make them crispy. After about 5 minutes of frying and frequently turning them on all sides, you will see that the spring rolls are golden on both sides, then remove them to drain the oil.

    Additionally, you can also use an air fryer to fry the spring rolls. You can use a brush or spray bottle to create a thin layer of oil on the surface of the spring rolls to help the finished product be golden, crispy, and appetizing.

    Then, prepare a bowl, add fish sauce and the ingredients in the ratio of 1 sugar : 1 fish sauce : 1 sour (lemon, vinegar,…) : 5 water, then stir well.

    Finally, add the soaked garlic and chili to the dipping sauce bowl, and you’re done!
