- Choose milkfish roe that is intact, not crushed, and has the membrane surrounding it fully intact.
- Prioritize choosing roe that is light yellow or pale pink, with the characteristic fishy smell of roe, not an unpleasant odor.
How to cook Stewed Milkfish Roe

Prepare the ingredients
Wash the roe, let it dry, and cut it into bite-sized pieces.
Pound 4 bulbs of shallots, 1 stalk of green onion, and 1 chili pepper until fine.

Marinate the roe
Marinate the roe with 3 tablespoons of sugar, 3 tablespoons of fish sauce, 1 tablespoon of seasoning powder, 1 teaspoon of monosodium glutamate, 1 teaspoon of chili powder, 1 tablespoon of caramel sauce, along with the ground spices.
Wait 30 minutes for the roe to absorb the spices evenly.

Stew the fish
Add 2 tablespoons of cooking oil to the earthen pot, add 1 spoon of minced shallots and 1 tablespoon of minced garlic, and sauté until fragrant and golden over low heat.
Pour the roe into the pot and stew on high heat for 5 minutes, then reduce to low heat and stew for 15 minutes until the sauce thickens.
Taste and adjust the seasoning, then turn off the heat, sprinkle with ground pepper, chopped green onions, and 1 sliced chili to add flavor, and it’s done.
