How to choose fresh and delicious shark fish
For live fish
- You should observe and choose fish that are swimming vigorously, have bright skin, and clear eyes with red gills.
- Do not choose fish with scratches on the skin, unusual color, or foul smell.
For chilled and pre-prepared fish
- You should observe and choose fish that have bright skin, scales that are still firmly attached to the skin, clear eyes that are not bulging.
- Gently touch the body of the fish to feel its firmness, do not choose fish that are soft or mushy.
- Do not choose fish with bruised, damaged bodies, foul smell, flat belly, and protruding anus.
How to Prepare Shark Fish Braised in Turmeric

Prepare the Ingredients
Shallots and garlic should be peeled and washed clean. Ginger should be peeled, washed, and sliced thinly.
Chili peppers should have the stems removed and be washed and drained. The green onions should have the roots cut off, washed, and then drained.
After purchasing the fish, clean it. If the fish is pre-prepared, use diluted salt water to wash it, then rub a few slices of ginger on the fish to help reduce the fishy smell, and then rinse the fish several times with clean water, cut into bite-sized pieces, and let it drain.

Marinate the Fish
Add 2 chili peppers, 3 shallots, 1/2 garlic clove, and 5 slices of ginger into a bowl (or mortar) and pound the mixture until fine.
Place the fish in a bowl to marinate, adding 1 teaspoon of salt, 2 teaspoons of sugar, 2 teaspoons of turmeric powder, 1 teaspoon of pepper, 1 teaspoon of seasoning powder, and 3 tablespoons of fish sauce along with the pounded mixture.
Mix the ingredients well to allow the fish to absorb the flavors and marinate for about 30 minutes.

Cook the Fish
After marinating for 30 minutes, you take the fish to cook.
Place a pot on the stove, heat 2 tablespoons of cooking oil, add 1 chopped shallot and the remaining 1/2 clove of garlic to sauté until fragrant, then add the marinated fish and pan-fry until browned on both sides, then add 300ml of boiling water. Reduce the heat and cook for 30 minutes.
After 30 minutes, when the cooking water reduces, you can taste and adjust the seasoning to your liking, then add a few chilies and fresh green onions into the pot of fish and turn off the heat.
Tip:
- If it’s bland, you can add more fish sauce. If you prefer it sweet, add more sugar to the pot to suit your family’s taste.
- To prevent the fish from being fishy, use boiling water for cooking, do not use cold water.
