- You should choose tilapia that is large and round, feels firm in hand, and has an intact body with few scales missing. These fish will yield more meat, and the flesh will be firmer and fattier.
- Choose fish with bright red gills, clear eyes, a body without white spots or blood clots, and an intact exterior without any skin wounds.
- Additionally, you should choose male fish as they will be firmer and sweeter.

How to choose fresh and delicious white radish
- It is advisable to buy medium-sized, elongated white radishes towards the tail end. Those radishes with a thick tail often lack flavor.
- Choose white radishes that still have their stems and roots intact, as these are freshly harvested.
- Avoid selecting white radishes that are wilted, soft, or have damaged stems that are leaking water.

Preliminary processing and marinating fish
When you buy snakehead fish, scale it, cut off the fins, gut it, and then wash it thoroughly with water several times.
Steps to prepare snakehead fish without a fishy smell and clean slime
- Step 1: Wash the snakehead fish 2 – 3 times with clean water.
- Step 2: Thoroughly clean the inside of the fish’s belly, remove the gills, and ensure all bile and entrails are completely cleaned.
- Step 3: Use a knife to cut off the fish fins and scrape off the scales.
- Step 4: Rub a little salt (or lemon) on the fish’s body and belly.
- Step 5: Soak the fish in salted water (you can add some vinegar or a little alcohol).
- Step 6: Rinse the fish 2 – 3 times again and let it drain.
Marinate the fish with 2 teaspoons of coloring sauce, monosodium glutamate, sugar, and seasoning powder, each type, 2 tablespoons of fish sauce, and 1 teaspoon of pepper. Mix well to absorb the spices and marinate for about 20 minutes.

Prepare other ingredients
When you buy the white radish, peel it, wash it clean, and cut it into large pieces about 2 finger joints thick.
Wash the scallions and cilantro. Cut the scallions in half into large sections.
Wash the chili and then slice it lengthwise.

Braised fish
Put a pot on the stove, add 2 tablespoons of cooking oil. When the oil is hot, add the fish to fry briefly. After about 1 minute, turn it over to the other side.
When the fish meat has tightened, add about 300ml of water and cover the pot to braise the fish over high heat. When the water boils, add the white radish and chili to braise together on low heat for about 15 minutes.
Tip: To prevent the dish from being fishy, you should use boiling water to braise the fish.
Stew until the radish starts to turn translucent. Before turning off the heat, add the green onions and cilantro. Additionally, you can adjust the seasoning to suit your family’s taste.
