  • For snakehead fish that are no longer alive, you should choose those that are straight, elongated, and uniformly rounded. The back should be brown or gray with a silver sheen, while the belly should be white.
  • Choose those that have bright colors, clear eyes, and firm skin and body.
  • Do not choose those with cloudy eyes or that feel soft and mushy when picked up.

How to choose fresh and delicious white radish

  • To choose good radish, select those that are long and slender, evenly shaped with few cavities or dents.
  • Good radishes have a slightly opaque white skin, are firm and shiny, without wrinkles or bruises. Additionally, you should buy those with fresh green tops.
  • Avoid buying radishes that are scarred or not intact, shriveled, or those that feel soft and not firm when pressed.

How to Prepare Braised Mudfish with White Radish

  • Prepare the Ingredients

    Peel the white radish, cut it into 4 pieces, and then slice it into pieces about 2 finger lengths long.

    Wash the mudfish thoroughly, then use a little salt to gently rub the entire body of the fish to remove all dirt and slime. Place the fish in a basket and rinse it under running water, then gently shake the basket to drain the water and completely remove any dirt.

    How to Clean Mudfish to Remove Slime and Odor

    • Clean mudfish with salt and vinegar: For this method, simply mix vinegar with a little salt and gently rub it over the fish’s body; the fish will be free of slime and significantly reduce its fishy smell.
    • Clean mudfish with hot water: First, boil water at about 70 – 80 degrees Celsius and add a little salt. Then, soak the mudfish in it for about 5 – 7 minutes; when the water cools down, use your hands to gently rub the fish. Finally, rinse it again with clean water.
    • Clean mudfish with ash: If you have kitchen ash at home, cleaning the fish is very simple. Just put the mudfish in a basin of ash and then use the ash to rub along the fish’s body. This method can thoroughly remove slime and fishy smell.
    • Clean mudfish with banana leaves: Just crush a handful of fresh banana leaves and use it to rub the fish. The sap in the banana leaves can effectively remove slime and fishy odor. After that, just rinse with clean water to prepare delicious dishes.
    • Clean fish slime with flour: Use flour on the fish, then wipe off the slime and rinse with water.

    Put the mudfish in a bowl and marinate with 1 tablespoon of seasoning, 1 tablespoon of monosodium glutamate, and 4 tablespoons of fish sauce.

    Mix well and let it sit to marinate for 15 minutes for the fish to absorb the seasoning.

  • Cooking fish

    Put 2 tablespoons of cooking oil into a pan, heat until the oil is slightly bubbling over medium heat, then add 1 tablespoon of sugar, and stir well to caramelize the sugar.

    When the sugar turns a nice brown color, add a little chopped green onion to sauté until fragrant.

    Next, add the marinated mudfish and stir well. When the fish pot is slightly reduced, add about 1 bowl of water, continue to simmer on the stove for about 1-2 minutes before adding the white radish.

    Cook the fish until the water in the pot boils, the fish is just tender, the radish is cooked, becoming clearer, and absorbing the light brown color. At this point, add a little chopped green onion and stir well to finish.

    Tip:

    • To prevent the fish from being fishy, when adding water to the pot, you should add hot water.
    • While cooking, remember to skim off the brown foam for the fish to be more delicious.
