- Choose fruits with smooth, shiny skin, dark orange-yellow color, not bruised, blackened, or cracked. Pay special attention to selecting fruits with stems still attached for tying.
- If the stem leaves are bright green, the persimmons will be crispy and delicious; if the stem leaves are yellowing, it means the persimmons have been picked for a long time and will likely be soft and bland.
- Gently press on the persimmon; if it feels firm and does not dent, it is fresh and crispy. If the persimmon is soft, especially if the stem is mushy with many bruises, you should not buy it.

Preparing the persimmons
You need to wash the persimmons thoroughly, especially the stem area to avoid dirt that can cause mold.
Next, peel the persimmons lengthwise from top to bottom or bottom to top so that when they dry, they will have beautiful patterns on the fruit.
Note: You must be careful to peel gently to avoid bruising the persimmons and not to detach the stems, as this will make it impossible to tie them for hanging.

Blanch the persimmons
You place a pot on the stove, add 1 liter of water and bring it to a boil, then add the peeled persimmons to blanch for about 5 – 7 seconds, then take them out to drain.
Tip:- Blanching the persimmons in boiling water helps protect them from mold.
- In addition to blanching in boiling water, you can soak the persimmons in alcohol or spirits for 3 to 5 minutes as well.

Tie the string and hang the persimmons
If the persimmons still have long stems, you can wrap the string around the stem or wrap the string around the bottom of the persimmon, tying it tightly because as the persimmons dry, the string will loosen and may fall off.
Tip:To be more careful, you can tie the string in a crisscross pattern to secure the persimmons, or you can use a sturdy net bag, but this will prevent the persimmons from getting enough air and sunlight, and this method will take longer to dry.
Next, you take the persimmons outside to dry. In the evening, bring them back inside and turn on a fan lightly or set the air conditioner to 16 degrees. To ensure the persimmons do not get dusty or attract flies, prepare a clean sheet to cover them.
Note:
- No need for too much sun, as excessive heat will dry out the persimmons, quickly dehydrate them, making them hard and not sweet.
- You should dry the persimmons in gentle sunlight, with some wind, in a well-ventilated area, avoiding dampness and rain. The months of October – November – December are the best times to dry persimmons. During this period, the weather is dry and clear, with just enough sunshine, and this is also when the persimmons begin to ripen to a golden red color.
