Pork leg 1 piece Lemongrass 3 stalks Turmeric 1 root Galangal 2 roots Chili 2 pieces Seasoning powder 3 teaspoons Caramel sauce 2 teaspoons (coloring sauce) MSG 2 teaspoons Fish sauce 2 teaspoons Shrimp paste 1 tablespoon (to taste)

How to choose fresh and delicious pork leg

  • When buying pork leg, you should choose pieces that have bright, fresh meat and skin, with good elasticity. When touching the surface, it should feel moist and soft, not dry, and should not emit any unpleasant or strong odors.
  • In addition, when purchasing, you should choose pieces with intact hooves that are not loose. Because there is a high possibility that those legs with loose hooves come from sick pigs.
  • Do not choose pork legs that show signs of water retention and have yellow fluid after each cut, as these may be old or spoiled pieces.

  • Prepare the ingredients

    The pork leg meat you buy should be thoroughly washed, the nails cut off, and the hair scraped clean. After that, to remove the odor from the pork leg, you should briefly roast it over charcoal until the skin turns golden and fragrant.

    After roasting the pork leg, wash it again with water, let it drain, and cut the pork leg into small, bite-sized pieces.

    Turmeric should be peeled, washed, and minced. Lemongrass should be stripped of its outer layer, washed, then smashed and minced. Galangal should be peeled, washed, and minced or blended if you have a blender.

  • Marinate the spices

    You marinate the pig’s trotters with 3 teaspoons of seasoning powder, 2 teaspoons of monosodium glutamate, 2 teaspoons of fish sauce, 2 teaspoons of coloring sauce (coloring water), 1 tablespoon of shrimp paste, galangal, lemongrass, minced turmeric and mix well, then marinate for 30 minutes for the trotters to absorb the spices.

  • Making ginger and lemongrass braised pork leg

    Heat up a pan on the stove, then add the marinated pork leg into the pan, stir-fry quickly over high heat for 5 – 7 minutes, until the pork leg is seared, then transfer it to a pot.

    Add 2 chili peppers, 1 small bowl of filtered water (rice bowl) into the pot and braise on low heat for 30 minutes, then adjust the seasoning to taste, turn off the stove, and the dish is complete.
