Ingredients for Pork Skin Mango Salad For 2 people
Pork skin 200 gr Green mango 300 gr Peanuts 5 gr Carrot 1/2 piece Lime 1/2 piece
Herbs: cilantro, Vietnamese coriander, basil: a little of each depending on taste
Seasonings: sugar, fish sauce, salt, Korean chili powder (can be substituted with 1 fresh chili)

How to choose good mangoes: You should buy very green and sour mangoes, as they will be crunchy and have a sour taste when making the salad. Do not choose mangoes that show signs of ripening or being ripe. If you do not like much sourness, you can choose four-season mango or sweet mango.
How to choose good pork skin: Good pork skin should be chosen from the area under the tenderloin, shoulder meat, with thick, flat skin, and large size for easier preparation. Avoid choosing belly skin as this part lacks firmness, is thin, and cutting it thinly makes it easily mushy and not crunchy. Fresh-looking skin, with elasticity, and no unpleasant smell indicates good pork skin.
How to prepare Mango Salad with Pig Skin

Prepare the ingredients
Wash the mango to remove sap, peel it, and then use a grater to shred or a knife to cut it into thin strips as shown.
Clean and chop the various herbs.
Peel the carrot, cut it into small pieces or grate it.
Scrape the pig skin clean, rub it with salt and lemon or vinegar while washing to reduce the odor, then rinse it with water.
Place the pig skin in a pot, add enough water to cover it, add a little salt, and boil for about 15 – 20 minutes on high heat until cooked. Remove the skin and place it in a bowl of cold water with a little lemon for about 5 minutes to make it crispy and prevent browning. Then, remove it and let it drain.

- You can clean the hair by dipping the pig skin in boiling water for about 3 minutes to tighten the skin, then use tweezers to pluck out any remaining hair. Use a knife to remove all excess fat under the skin for a crispier texture.

- You should not boil it too long as it will make the pig skin soft and unappetizing.
