How to Cook Salted Pork with Shrimp Paste

  • Prepare the meat

    Wash the pork belly in diluted salt water and then rinse with clean water, drain. Then, cut the meat into pieces about 1/2 finger thick, suitable for eating.

  • Stir-frying meat

    Place a pan on the stove, add 2 tablespoons of cooking oil. When the oil is hot, add minced garlic, lemongrass, and chili peppers, and sauté until golden and fragrant.

    When the ingredients above are fragrant, add all the sliced pork belly, stir-fry over medium heat for about 10 minutes until the meat is firm and cooked through.

    Tip: Depending on your preference and to avoid the meat being too greasy, you can adjust the amount of cooking oil to suit your family’s taste.

  • Meat Braise

    When the meat in the pan is fragrant and the liquid has reduced, add 100g of shrimp paste and stir well. Add 200ml of filtered water, 3 tablespoons of sugar, and stir again 1 – 2 times until the sugar dissolves.

    Braise on low heat for about 10 more minutes until the meat is cooked, tender, the braising liquid thickens and releases an enticing aroma; then taste and adjust the seasoning to your liking, add a few red chilies to make the dish more eye-catching, turn off the heat and it’s ready to enjoy.

    Tip:

    • To make the dish more delicious, remember to skim off the foam during the braising process.
    • Depending on your preference, you can replace the filtered water and sugar with coconut water to make the dish, which will help the meat become richer and sweeter naturally.

    Wash the pork belly with diluted salt water, then rinse with clean water and let it drain. Cut the meat into bite-sized pieces.

    Remove the roots and green leaves of the lemongrass, wash it clean, peel the garlic, chop the chili pepper and set each type aside. Peel the shallots and slice them thinly.

  • Meat Stew

    Add 2 tablespoons of cooking oil into the pot, heat over medium flame until the oil is hot. Next, add the minced lemongrass and chili and sauté until fragrant.

    When the lemongrass and chili are fragrant, add the minced garlic and thinly sliced shallots, and continue to stir evenly for 30 seconds, then add the prepared pork belly and stir-fry evenly.

    Stir for about 1 minute until the meat is seared, then add 100g of shrimp paste, mixing it until the shrimp paste evenly coats the meat. Then add about 1/2 cup of water (rice bowl).

    Cook over medium heat until the water boils, then season the pot with: 3 tablespoons of sugar, 1 teaspoon of monosodium glutamate, then mix well and cover, simmer the meat for about 20 minutes.

    After 20 minutes, open the lid and adjust the seasoning to taste, continue to simmer until the sauce thickens, then turn off the heat.
