Ingredients for Green Peppercorn Braised Pork For 3 people

Pork belly 500 gr Green peppercorn 100 gr Shallots 3 bulbs (minced) Chili 3 pieces Fish sauce 2 tablespoons Caramel sauce 1/3 tablespoon Common spices a little (salt/ sugar/ pepper/ seasoning powder/ monosodium glutamate)

How to Choose Fresh and Delicious Pork Belly

  • You should choose pieces of meat that are bright pink, with high elasticity; when you press with your hand, it should not leave a dent.
  • Fresh meat will be firm, with even color, not slimy and without unpleasant odor.
  • Additionally, you should choose meat with a balanced ratio of lean and fat, with a thick outer skin, fat about 1.5 – 2cm thick, and the lean meat tightly attached to the layer of fat, which will taste better when braised.

How to Prepare Green Peppercorn Braised Pork

  • Prepare the pork

    Buy pork belly and wash it with diluted salt water, then rinse with clean water and let it drain. Cut the meat into bite-sized pieces, about 1.5 finger widths thick.

    How to clean pork properly, without odor

    • To completely eliminate the odor of the pork, before preparing the dish, briefly dip the meat in boiling water for about 2 minutes, then take it out and rinse with cold water.
    • Another useful tip is to add a little white wine to the water when blanching the pork. The wine is very effective at eliminating odors.

  • Marinate the meat

    Take 1 portion of green pepper, separate it into a food bag, crush it into small pieces to create the characteristic aroma of green pepper. Then add it to the prepared meat.

    Next, add minced shallots along with the seasonings: 1 tablespoon of sugar, 1 tablespoon of seasoning powder, 2 tablespoons of fish sauce, 1/3 tablespoon of caramel sauce, a little monosodium glutamate, and a little ground black pepper.

    Mix the meat with the seasonings, cover it with plastic wrap, and marinate for 30 minutes.

    • To save time, you can buy caramel sauce directly at spice stores, supermarkets, or at Bach Hoa XANH.
    • Or you can take the time to make it at home to ensure hygiene!

  • Braised Meat

    Place a clay pot on the stove, when the pot is hot, add the meat to sauté until it is browned, stirring well to avoid any fishy smell from the meat.

    Once the meat is browned, add about 1 cup of water to the pot, just enough to cover the meat. Cook until the meat boils, stirring evenly.

    Next, reduce the heat to low until the meat is colored and the sauce thickens. Add the leftover green pepper and a little chili for decoration.
