Cooking the fish
Continue to add the prepared shrimp fish, gently shake the pan to let the fish absorb the seasoning evenly. Stir once every 5 minutes to ensure the fish is evenly seasoned.
Cook the fish on low heat until you see the fish meat firm up and the sauce thickens, then turn off the heat to finish.

- When cooking, do not use chopsticks to stir vigorously; just gently shake the pan so the fish can absorb the seasoning without falling apart.
- You can also cook the fish with fried pork fat to enhance the richness and appeal of the dish.
- You can adjust the seasoning according to your family’s taste; however, for the shrimp fish sauce, it should not be too bland as it won’t have the right flavor!
