For live fish

  • The freshest fish is still alive; you should choose those that swim vigorously, have clear eyes, pink gills, shiny scales, and skin without any strange color.
  • Additionally, if you notice any abnormal signs such as bloating, weak swimming, or pale color, you should avoid purchasing them.

For refrigerated and pre-prepared fish

  • The fish’s eyes should be clear, bright, not cloudy, and slightly bulging. Avoid choosing fish with sunken eyes and a cloudy film.
  • The gills of the fish should be a bright red color, firmly attached to the fish, and not slimy. Avoid choosing fish with gray, loose gills that are slimy.
  • The flesh of the fish should be firm, tightly connected, not loose, and have high elasticity. Note that fish with pale, flaky flesh that leaves a dent when pressed are spoiled or chemically treated.
  • The mouth of the fish should be closed; when pressed, the body of the fish should have elasticity. Avoid choosing fish with open mouths that leave fingerprints when pressed.
  • To ensure quality and hygiene safety, you should purchase fish from reputable quality places such as large food stores or supermarkets.

  • Prepare and Marinate the Fish

    After buying the fish, to clean and reduce the fishy smell, you should rub the fish with salt, cut off the tail and fins, remove all the internal organs, then rinse with clean water and let it drain. To save time, you should ask the seller to clean the fish when purchasing!

    Put the drained fish into a bowl, marinate with a mixture of seasonings including: 1 teaspoon of coloring sauce for braising fish, 1 teaspoon of monosodium glutamate, 1.5 teaspoons of sugar, and let it sit for about 10 minutes for the fish to absorb the seasonings.

  • Fish Stew

    Put a pot on the stove, add 1 tablespoon of cooking oil and heat it over medium heat, wait for the oil to get hot, then add the marinated fish, stir to sear the fish, then add 2 tablespoons of fish sauce, and add a little water so that it just covers the fish.

    Lower the heat and stew the fish for about 15 minutes until the sauce thickens, then add 1 teaspoon of ground pepper, you can also add a little chopped green onion for extra aroma if you like, season to taste, then turn off the heat, and serve the fish on a plate to enjoy.
