Prepare dried shrimp
Put 500ml of water into a pot, then place the pot on the stove, turn on medium heat to boil the water.
When the water boils, add the dried shrimp and cook briefly for about 5 minutes, then remove the shrimp and rinse them with cold water and let them drain.
Next, put the shrimp into a large bowl, season the dried shrimp with 1/2 teaspoon of MSG, stir well and marinate for 15 minutes.

Make the sauce
In a bowl, add 2 tablespoons of water, 2 tablespoons of fish sauce, 1 teaspoon of black pepper sauce, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of sugar, and 50g of maltose.
Use a spoon to stir well until the mixture is dissolved.

Fry the dried shrimp
Heat a pan over medium heat, add 3 tablespoons of cooking oil, and allow the oil to heat up.
Then add the dried shrimp and fry for about 5 minutes until they are golden and fragrant, then turn off the heat and remove the shrimp to a bowl.

Stir-fry the dried shrimp
Reuse the oil from frying the shrimp, turn the heat back on to medium, heat up the remaining oil in the pan, add 3 tablespoons of minced garlic and sauté until fragrant, then remove the garlic from the pan.
Next, add 1 tablespoon of minced garlic, 1/2 teaspoon of finely chopped bird’s eye chili, 1 teaspoon of pepper, stir well until fragrant, then add the sauce.
Add 1/3 teaspoon of salt, stir well, then add the dried shrimp and stir-fry until the sauce reduces.
Add 1 tablespoon of chili powder, the sautéed garlic, and 1 tablespoon of lime juice, stir well, taste and adjust the seasoning, then turn off the heat.
