  • To choose good chot fish, you should select fish that are of moderate size, have sparkling, clear eyes, and visible pupils inside, with a flattened body and a golden-yellow sheen.
  • Fresh chot fish is when you press the skin or belly with your hand and feel good elasticity, the skin is wet, shiny, and not slimy.
  • Avoid buying chot fish that smells fishy, has eyes turning black or red, and when touched, the flesh is soft and mushy because these fish are no longer fresh and will not guarantee quality when eaten.

How to cook Braised Snakehead Fish with Pepper

  • Prepare the snakehead fish

    After purchasing the snakehead fish, remove the gills, cut the fins, use lemon and a bit of salt to rub all over the fish, then rinse thoroughly with water.

    Next, place the fish in a pot, add 5 cloves of garlic and 4 thinly sliced shallots, and season with 1/2 tablespoon of salt, 1 tablespoon of fish sauce, and 1 tablespoon of cooking oil.

    To make the fish fragrant and give it a nicer color when braising, add 2 tablespoons of caramel sauce and 5 green peppercorns, then marinate for about 20 minutes to let the fish absorb the seasoning.

    • Method 1: After cleaning the fish, cut it into bite-sized pieces, soak it in rice water for about 15 – 20 minutes, then remove and rinse briefly with water.
    • Method 2: Soak the fish in diluted salt water for about 5 – 10 minutes or rub salt on the fish, then scale and clean the fish, rinsing it again with water before cooking.
    • Method 3: After cleaning the fish, soak it in water containing a few tablespoons of white wine or vinegar for about 5 minutes, then rinse again with water.
