Mackerel 500 gr (about 3 fish) Chili 1 piece Garlic 10 cloves Scallions 3 stalks Cooking oil 200 ml Annatto powder 1 teaspoon Fish sauce 2 tablespoons Common seasoning a little (seasoning/ sugar/ ground pepper/ salt)

How to Cook Mackerel with Garlic and Chili

  • Prepare the mackerel

    After purchasing the mackerel, clean the scales, remove all internal organs and the head, cut into pieces about 1 finger long, and then rinse thoroughly.

    Effective ways to eliminate the fishy smell of mackerel:

    • To clean and remove the fishy smell, soak the fish in rice water for about 15 – 20 minutes, then take it out, rinse with clean water, and proceed to cook.
    • You can also use a mixture of salt and alcohol to soak the fish for about 10 minutes and then rinse with water.
    • Or use ginger to clean the fishy smell; soak the fish in water with an additional crushed piece of ginger for about 5 minutes, then take it out to drain before cooking.

  • Prepare other ingredients

    Clean the green onions by removing the damaged leaves, cutting off the roots, rinse them thoroughly, and then finely chop the leaves, keeping the green tops to slice separately.

    Remove the seeds from the chili and cut into thin strips. Peel the garlic and then mince it.

    Add about 200ml of cooking oil into the pan, heat the oil until it boils and add the prepared mackerel to fry.

  • Fish Stew

    Add 2 tablespoons of cooking oil (use the oil from frying fish) to the pan, heat the oil and add 1 teaspoon of annatto powder, stirring until the powder dissolves.

    Once the annatto powder has dissolved in the oil to form annatto oil, add 2 tablespoons of minced garlic and chopped green onions to sauté until fragrant and golden.

    To ensure the fish is well absorbed and tastes better, you should stew the fish over medium heat, turning it frequently. When you see the sauce has thickened, add 1 tablespoon of ground pepper, sliced chili, and chopped green onions, stir well, and turn off the heat.

    When buying mackerel, to save time on preparation, you should ask the seller to clean and remove the innards for you.
