How to choose fresh and delicious chicken
When buying live chicken:
- Hold 2 chickens of the same size, the one that feels heavier has firmer meat.
- The chicken’s beak should be sharp, shiny, and not have any slime on it.
- The chicken’s legs should be straight, slender, evenly shaped, without scratches, chips, or broken nails, and should not have any red spots or unusual markings on the legs.
- When lifting the chicken’s feathers, the skin should be thin and soft; a gentle squeeze of the chicken’s body should feel firm, not flabby, with some large yellow streaks under the breast and wings. Under the wings, if you can see meat and blood vessels, it indicates that the chicken is firm and has no fat.
- The chicken’s crop should not be tight, indicating a healthy chicken.
When buying pre-prepared chicken
- Our chicken skin is light yellow with darker yellow in some places like the breast, wings, and back, while the super egg-laying chickens are either white or uniformly yellow (possibly due to toxic dyeing). To detect if the chicken has been dyed, observe if the skin is yellow and the fat underneath is white; if so, it is chicken that has been chemically dyed.
- Our chicken skin is thin, smooth, and has high elasticity. Choose chicken meat that looks fresh, with no foul smell or antibiotic odor, and the skin should have no bruises or blood clots. To buy good chicken, avoid dark-colored chickens as they are likely to have died before processing.
- Additionally, to avoid buying water-injected chicken, pay attention and use your hand to press on the suspected water-injected areas (mainly thighs and breasts) to check; if they feel flabby, slippery, or misshapen, do not buy. The chemicals injected are not good for health.

Prepare the chicken
Clean the chicken, pluck out the remaining fine feathers (small black down feathers still stuck on the chicken’s skin), rub a little salt or lemon on the chicken skin to clean it and reduce odor, then rinse with water.
Let it drain and cut into bite-sized pieces.
Tips for cleaning chicken without odor:
- To prevent the chicken from smelling, you need to remove all feathers, including the fine ones (down feathers) to make the chicken white, clean, and less smelly.
- Mix vinegar and salt in a ratio of 2:1 and rub all over the chicken, scrubbing several times and then rinse thoroughly with clean water, or rub lemon and salt on the chicken skin, or use a little ginger and white wine to rub on the chicken to eliminate the odor.

Prepare other ingredients
Wash the eggs, soak them in cold water for about 5 minutes to allow the eggs to absorb enough water. When boiling, the egg shell will not crack, and the eggs will be evenly delicious.
Put the eggs in a pot, turn on medium heat, and boil for about 7 minutes for the eggs to cook.
Once cooked, transfer the eggs to a bowl of cold water, then gently remove the egg shells.
Clean the green onions, peel the garlic, clean the chili, and peel the shallots.
Chop the green onions into small pieces, and finely chop the chili, shallots, and garlic.
Quick egg peeling tips:
- After boiling the eggs, soak them in a bowl of cold water for about 5 minutes; the temperature of the eggs will drop, making them easier to peel.
- After boiling the eggs, add 1 tablespoon of vinegar to the pot and stir well; this will make the eggs easier to peel.

Marinating Chicken
Put the green onion roots, garlic, shallots, and chopped chili into a mortar and pound them finely. Then add 2 tablespoons of sugar and 4 tablespoons of fish sauce, mixing well to create a marinade for the meat.
Add the prepared chicken to a bowl, pour in the marinade you’ve prepared, mix well, and let the chicken marinate for about 30 minutes to absorb the flavors.

Braised Chicken
In a pot, add about 2 tablespoons of cooking oil, add 1 tablespoon of sugar, reduce the heat to low, and cook until the sugar dissolves and turns a caramel color, stirring regularly to avoid burning.
When the sugar reaches a caramel color, add the marinated chicken, stir-fry on high heat, add 500ml of water, bring to a boil, then skim off the foam, add the peeled eggs into the pot, cover, and braise on low heat for about 30 minutes.
Season to taste: 1 tablespoon of fish sauce, 1 teaspoon of seasoning powder. After about 30 minutes of braising, when the liquid reduces, and the eggs have absorbed the flavor, turn off the heat and add the chopped green onions.
Tip: If you have fresh coconut water, replace the 500ml of plain water with 500ml of coconut water, the meat will be even more tender and delicious.
