How to prepare Braised Chicken with Fresh Bamboo Shoots

  • Prepare and Marinate the Chicken

    First, with 700g of chicken meat purchased, rub some salt over the entire surface of the meat for 3 minutes, then rinse it several times with clean water, drain, and use a knife to cut it into bite-sized pieces.

    Next, place the prepared chicken into a bowl along with 1 tablespoon of seasoning and 1/2 teaspoon of MSG, use a spoon to mix well, and let the chicken absorb the seasoning for about 5 – 10 minutes.

    With 500g of fresh bamboo shoots bought, you peel, rinse briefly with water until clean, let it drain, then use a knife to cut into bite-sized pieces.

    Green onions should have their roots removed, washed directly under running water until clean, drained, and chopped finely. As for garlic, peel and mince it well. The chili should have its stem removed and be sliced thinly on the diagonal.

    At the same time, place a pot on the stove with 700ml of water and 1 teaspoon of salt, and bring it to a boil over high heat.

    Next, add all the freshly cut bamboo shoots, blanching them briefly for about 3 – 4 minutes. Once the water comes back to a boil, turn off the heat, then transfer them to a bowl of cold water and soak for about 2 minutes, rinsing again until clean, then let them drain.

    How to properly prepare bamboo shoots

    • After peeling and cutting the bamboo shoots in half, boil them in hot water, then soak them in rice washing water for 12 hours or overnight to help remove the bitter sap and keep the bamboo shoots white and crunchy.
    • Peel and soak the bamboo shoots in lime water for about 30 minutes, then boil in water 2 – 3 times until the water in the pot is clear and no longer cloudy with lime water, then you can proceed to cook them.
    • Boil bamboo shoots with water spinach; when the bamboo shoots are cooked, drain all the water, remove the water spinach leaves, rinse with cold water, then rinse again with water before proceeding to cook.

  • Braised Chicken

    Once the ingredients are prepared, place a pan on the stove with 3 tablespoons of cooking oil, heating over medium heat. When the oil is gently bubbling, add the marinated chicken and fry for about 5 – 7 minutes. When the chicken meat firms up, turn off the heat and transfer the chicken to a plate.

    Using the same pan, continue by adding 1/2 of the minced garlic to sauté until fragrant. Then, add all the drained bamboo shoots, 1 teaspoon of seasoning, and 1/2 teaspoon of monosodium glutamate, using chopsticks to stir evenly for 5 minutes. When the bamboo shoots are well coated with seasoning, turn off the heat and transfer them to a plate.

    Next, place another pot on the stove with 2 tablespoons of cooking oil and 1/2 tablespoon of sugar, and cook over low heat for about 2 – 3 minutes.

    When the sugar has melted and turned a golden brown, add the pre-fried chicken, increase the heat to medium, and stir evenly for 2 minutes.

    Then, add the fresh bamboo shoots, continue to stir for another 2 minutes, then season with 2.5 tablespoons of fish sauce, 1 teaspoon of seasoning, and 1/2 teaspoon of monosodium glutamate, mix well, and add 1 cup of water (the type used for rice) and proceed to braise over low heat for about 20 – 30 minutes.

    When the liquid has reduced, adjust the seasoning to taste, add the remaining minced garlic, green onions, and chili peppers, then turn off the heat and enjoy immediately!

    Tip: Additionally, if you are worried that caramelizing the sugar incorrectly will affect the flavor of the dish, you can substitute with coconut caramel instead!

    You place a pot on the stove with 2 tablespoons of cooking oil over medium heat. When the oil starts to shimmer, add 2 shallots and sauté until fragrant.

    Then, add all the marinated chicken, and stir-fry evenly for about 3 – 5 minutes. Once the chicken has browned, add the prepped dried bamboo shoots, and continue to stir for another 3 – 5 minutes.

    Next, add 150ml of water until it just covers the chicken, and braise for 15 – 20 minutes. When the water has reduced, season with 1 tablespoon of chicken seasoning and stir well again.

    Finally, when the chicken and bamboo shoots are cooked, adjust the seasoning to taste, add the chili peppers, and braise for another 2 – 3 minutes before turning off the heat. Serve on a plate and enjoy!
