Vegetarian chicken thighs 300 gr Peeled mung beans 30 gr Gelatin powder 1.5 tablespoons Chili 1 piece Shallots 20 gr Annatto oil 1 teaspoon Fresh coconut water 200 ml Plain water 250 ml (for making eggs) Soy sauce 1 tablespoon Vegetarian fish sauce 4 tablespoons Vegetarian seasoning 1/2 tablespoon Sugar 4 tablespoons

How to make Vegetarian Braised Chicken

  • Prepare the ingredients

    For the mung beans, rinse briefly, soak in water for about 1 hour, then steam until cooked and mash the mung beans until smooth. As for the shallots, peel and crush them together with the chili.

    Tip: The mashed mung beans should be dry, avoid being too moist to make the egg yolks tastier.

    Add all the mashed mung beans into a bowl along with 1 teaspoon of annatto oil, a little sugar, and vegetarian seasoning, and mix well. Then, form small round balls with this mixture, which should yield about 6 egg yolks.

    Next, cook 1.5 tablespoons of agar-agar powder with 250ml of water to make the egg whites.

    Finally, pour into a mold to shape the egg.

  • Marinate the chicken

    Put all the chicken into a bowl, then season with: minced garlic and shallots, 1 tablespoon of sugar, and 1/2 tablespoon of vegetarian seasoning, mix well and let it marinate for about 15 minutes.

  • Sauté the chicken

    First, heat a pan with 1 tablespoon of cooking oil, wait for the oil to heat up, then add 1 tablespoon of sugar to caramelize.

    After that, add all the marinated chicken, stir-fry for about 3 minutes.

  • Marinate the eggs

    Take all the chicken sautéing liquid into a bowl, then stir in 1 tablespoon of soy sauce. Finally, soak the prepared eggs in the sauce, allowing them to absorb the seasoning for about 30 minutes.

    Tip:

    • Since the egg whites are made from jelly, you cannot add the eggs to the hot sautéed chicken liquid, as it may cause the eggs to melt and break apart.
    • Only add the eggs when the chicken braising liquid is almost done to keep the eggs delicious and beautiful.

    Place a pot containing 4 tablespoons of vegetarian fish sauce and 200ml of fresh coconut water on the stove over low heat. Cook until the mixture is warm, then add 1 tablespoon of sugar and stir well.

    Next, add the chicken (that has been removed from the stir-fried chicken) into the pot of simmering fish sauce over low heat.

    After the sauce thickens, add all the marinated eggs, stew for a little longer, then turn off the heat.

    Vegetarian stewed chicken has a beautiful caramel color, and the chicken meat looks firm, resembling savory dishes. The egg white is crispy, combined with the creamy mung bean flavor of the yolk inside, and paired with the savory taste of the chicken infused with lemongrass aroma, served with hot rice is unmatched.
