How to choose good white tofu
- You can note that good tofu will always have an off-white color. In contrast, tofu with gypsum is usually yellower; the more yellow it is, the more gypsum it contains. Therefore, you should avoid buying pieces of tofu that are yellow or turning yellow.
- If you touch the tofu and feel it is soft and light in hand, then you should buy it. Heavy, firm, slightly hard, and square pieces of tofu should not be purchased.
- Pure tofu will have a fragrant smell, while tofu with gypsum will smell of lime or have no smell at all.
- Good tofu will have a distinctive rich soy flavor, while tofu containing a lot of gypsum will taste bitter.
How to prepare Vegetarian Chicken Drumsticks

Prepare the ingredients
Lemongrass bought should be cleaned, only take the stalk part about 10cm long. The white tofu should be squeezed dry, then use a spoon to mash it until very smooth.
Add 2 tablespoons of rice flour, 1 teaspoon of seasoning, 1 teaspoon of pepper, a little salt, and 1 teaspoon of vegetable butter to the mashed tofu. Mix well.
The ribs should be soaked until soft, then tear them into thin slices by hand.
The tofu skin should be cut off the surrounding edges with scissors, as this part is usually very hard. Continue to cut the tofu skin into square pieces the size of your hand, and the length must be equal to the length of the lemongrass that has been cut earlier.
Tip for you:
- The ribs should not be soaked for too long, the appropriate time is only about 5 – 10 minutes.
- You should tear the ribs into very thin slices along the existing fibers, be careful to tear as thin as possible.

Shape the chicken leg
Use a damp cloth to wipe both sides of the tofu leaf to help you easily shape the chicken leg.
Take a spoon to spread the white tofu evenly over half of the tofu leaf, and place the ribs evenly on the remaining part. Fold the tofu leaf in half, use a stalk of lemongrass as the core, and start rolling it to create the desired shape of the chicken leg.
Use banana leaves to cover the top of the chicken leg tightly, then wrap it securely, using string to tie it tightly, so that it will taste better when steamed.
Note:
- You should only use a damp cloth to wipe both sides of the tofu leaf, do not soak it directly in water, as it will make the tofu leaf soft and unappetizing.
- The tofu should not be too much; you should only take a sufficient amount and spread a thin layer on the tofu leaf.
- The order when rolling the chicken leg should be from the ribs to the white tofu so that it looks more like a real chicken leg when steamed.
- Banana leaves should be sun-dried once to help them become flexible and easier to wrap.
- The top of the chicken leg should be tightly wrapped with banana leaves when steaming to prevent water from flowing back inside, making the dish more chewy.

Steamed Chicken Thighs
Place a steaming pot on the stove to prepare for steaming, add a few stalks of lemongrass to the water to give the chicken thighs a fragrant scent while steaming.
Steam the chicken thighs for about 15 – 20 minutes, when cooked turn off the stove and take out all the chicken thighs.
Note: Depending on the size of the chicken thighs you wrap, the steaming time should also be adjusted accordingly.
