How to choose safe and delicious pork
- You should choose fresh pork pieces that have bright colors; the good meat color will be light pink or light red, and the fat will have a slightly translucent white color, with the characteristic fragrant smell of meat that is not unpleasant.
- You should buy meat pieces that feel firm and elastic, with no dents on the surface; when touched, the meat should feel solid.
- You should not choose meat with unusual colors, either too light or too dark. Avoid buying pieces with a shiny surface, which feel a bit slimy to the touch, and have strange or foul smells.

How to prepare dried pork using an air fryer

Chop garlic, chili, and lemongrass
First, peel the outer skin of the lemongrass, cut off the root, and then chop it into pieces. For the garlic, peel it and then chop it finely along with the chili.
Next, place 5 stalks of lemongrass, 2 cloves of garlic, and 4 chopped chilies into the grinder and blend until smooth.

Prepare the pork
First, when you buy pork, you will wash it with clean water and then let it drain. Next, you will use a knife to cut along the grain of the pork, with the first cut you will not completely separate the piece of meat, but will cut it in the next cut to make the dried pork larger.
Tip: When cutting along the grain of the meat, it will be easier to tear the dried pork. Note not to cut too thinly because the pork will shrink, and also not to cut too thickly because it will take longer to dry. -
Mix the marinade and marinate the meat
Lemongrass, garlic, and chili after being minced should be poured into a large bowl to marinate the meat.
Next, add all the other ingredients such as 2 tablespoons of annatto oil, 2 tablespoons of sugar, 1 tablespoon of chili sauce, 1 tablespoon of oyster sauce, 1 teaspoon of five-spice powder/turmeric/curry/braising spice, 1 teaspoon of salt/msg, and then use a whisk to mix well.
Then, add each piece of meat into the bowl and use your hands to evenly coat the marinade so that the color penetrates the meat evenly. After marinating, cover it with plastic wrap and place it in the refrigerator overnight.

Drying the meat
After marinating the meat with spices, place the meat in the air fryer and cook at 120 degrees Celsius for 25 minutes, then open the fryer and flip the meat, and continue cooking for another 25 minutes.
Next, cook at 100 degrees Celsius for 50 minutes, opening the fryer and flipping the meat every 25 minutes.

Final product
Dried pork made with the air fryer is very dry, the pieces of dried pork are just the right amount of dryness, shredded and squeezed with calamondin to eat, it’s absolutely delicious.
