Ingredients for Dry Tofu Serves 3
White tofu 500 gr Garlic 3 cloves Chili 2 pieces Cooking oil a little Green onion 3 stalks Chili sauce 1 teaspoon Vegetarian fish sauce 1 tablespoon Common seasoning a little (sugar/seasoning powder)
How to choose fresh and delicious tofu
- Choose pieces of tofu that are off-white in color, have a fragrant smell, and a characteristic creamy taste of soybeans.
- It is recommended to choose pieces that feel light when held, have good elasticity, and a smooth surface rather than being rough and hard.
- Avoid choosing pieces of tofu that have turned yellow and have a smell similar to lime, as these may be tofu that has been stored for too long or contains gypsum, which is not good for health.
How to Prepare Dried Tofu

Prepare the tofu
Wash the tofu you bought briefly with water and let it drain. Next, cut the tofu into thin slices for quicker drying.
Tip: The thinner you cut, the crispier and tastier the tofu will be after drying and frying. -
Dry the tofu
Place the sliced tofu on a tray, basket, or rack. Spread them out evenly and do not stack them to ensure quick drying. Next, cover the tofu with a thin mesh fabric to prevent insects from getting on it.
Dry the tofu under direct sunlight for about 5 – 7 hours until it is dry, firm, and chewy, then bring it inside. You can store this tofu in an airtight container and consume it over 2 – 3 months.

Fry the tofu
Add cooking oil to the pan, turn the heat to high until the oil is hot. When the oil is hot, add the tofu slices and fry over medium-low heat until they puff up, become crispy, and golden brown, then remove them.
Tip: After this step, you can place the dried tofu in a plastic bag or a tightly sealed jar for later use. Store it in a dry place away from direct sunlight. -
Make the sauce and complete
Add a little cooking oil to the pan and heat it over medium heat. When the oil is evenly hot, add chopped green onions and chopped chili, stir well until fragrant and golden.
Next, add 1 teaspoon of vegetarian fish sauce, 1 teaspoon of chili sauce, 1 teaspoon of sugar, and 1 teaspoon of seasoning powder. Stir well until the sauce is blended and thickened.
When the sauce thickens, add the fried tofu and stir well to coat the tofu evenly with the sauce. Stir well for 2 minutes, then turn off the heat and plate the dish.

The final product
