Prepare and boil the duck
For quicker and more convenient preparation, you can ask the seller to clean the duck for you. When you get home, just eliminate the duck’s odor by rubbing it with salt and crushed ginger for about 5 – 7 minutes, then rinse it with clean water.
Put a pot on the stove, add the prepared duck breast along with 20g of ginger and 1 teaspoon of salt, cover it, and boil for 25 minutes.
After 25 minutes, take the duck out and slice it into thin pieces about 1/2 finger thick, and set aside.
How to prepare duck without odor or fishy smell
- Method 1: You can use salt, white alcohol, and a little crushed ginger to rub all over the outside of the duck for a few minutes, then rinse thoroughly with water and let it drain.
- Method 2: Alternatively, you can also rub salt evenly on the duck, then use a halved lemon to rub over the duck meat once more and rinse it clean with water.

Put 70ml of fish sauce, 80ml of water, 70ml of lemon juice, 60g of sugar, 10g of minced chili, and 10g of minced garlic into a bowl, then mix well until the ingredients dissolve.
