All-purpose flour 100 gr Durian flesh 100 gr (about 5 large segments) Chicken eggs 2 Unsweetened milk 200 ml Coconut milk 100 ml Whipping cream 200 ml Sugar 3 tablespoons

How to choose delicious durian

  • It is advisable to choose durians that have a greenish color or slightly yellowish hue because those are the ripe fruits on the tree. If you touch the skin and feel a cream-colored powder, then it is a chemically treated durian that has been artificially ripened.
  • Choose a fruit that, when you hold it and shake it lightly, or tap it gently with a durian opener, produces a “thud thud” sound or a dull sound, indicating that the fruit is firm and has thick flesh. If the sound is sharp like “clang clang,” it seems hollow, then that fruit has many seeds and is not tasty.
  • Ripe durians will have a more intense aroma compared to chemically treated durians, which usually have a very faint smell or even no smell at all, and their scent is often not natural, causing discomfort to the sense of smell.

How to Make Durian Crepe

  • Mixing the Batter

    Sift the flour finely and mix it evenly with 2 tablespoons of granulated sugar. Then, add 2 eggs, 200 ml of unsweetened fresh milk, and 100 ml of coconut milk to the flour and mix well.

    Use a sieve to filter the batter mixture about 2 times for a smooth texture to avoid lumps, then cover it with plastic wrap and place it in the refrigerator for about 30 minutes.

    Whip 200 ml of fresh cream with 1 tablespoon of sugar (adjust to taste). Then, put it in the refrigerator until use.
